Slow Cooker Spicy Black-Eyed Peas

wow - this is an awesome recipe! I took advice from alot of the reviews on here: Used chicken broth instead of water, and pan-fried the bacon. Then I used some of the leftover bacon grease to saute the onions, bell peppers, & garlic, before adding it to the crock pot. I omitted the jalapeno because i didnt want it too picante. Cooked for 4 hours on high, then for the last hour I added some collard greens. Came out perfect! Just a hint of spice - boy was it good!

High Temperature Eye-of-Round Roast

WOW super easy! I used kosher salt, fresh ground pepper, then I defrosted several of those frozen minced garlic cubes from Trader Joes, and spread a thin layer all over the roast. My oven does not hold heat so I followed other peoples tips. Roast 9 minutes for every pound. I heated oven to 500, then reduced it to 475 when I was ready to put the roast in. Roasted it at 475 for 27 minutes, then reduced heat to 220 for the next hour and a half. Came out just a little pink - just the way the husband likes it. I like mine a bit more rare so I'll reduce the time on my next roast. VERY EASY, especially for a terrible cook like me!

Roasted Rack of Lamb

WOW this was GREAT! Im a HORRIBLE cook - I mess up everything, but this was very easy and came out wonderful. ALTHOUGH, the rack I bought at Costco was WAY too fatty for my taste - very little meat. I doubled the garlic, and used dried rosemary instead of fresh. Also, the cooking time is actually longer than what the recipe says. The crust was so flavorful. I will use this recipe on costco's lamb chops next week. This recipe is a keeper!

Chicken Tikka Masala

AWESOME recipe! Im a horrible cook who LOVES Indian food and I was SO happy to have found such an easy and tasty recipe for tikka masala. I took the advice of others and cut the salt in half, omitted the jalapenos, and used milk instead of cream. This was soooo good my husband and I couldnt stop talking about it. I made it with a doctored-up version of Cucumber Raita (also on this site); it will be one of my regular recipes from now on! I think this recipe will also be good using Indian Cheese (paneer), which I will try next week

Chicken and Bacon Shish Kabobs

Forgot the mushrooms, and used Kikkoman Teriyaki marinade instead of plain soy sauce. Pretty good recipe. Surprisingly, i didnt have a problem with any grease fires from the bacon as I used thick cut bacon. The bacon keeps the chicken moist & flavorful. FORGOT THE GARLIC - it probably would have rocked my world if I had added garlic. I'll definately try this recipe again!

Coriander and Cumin Rubbed Pork Chops

I cant cook to save my life. Ive managed to mess up every recipe that Ive ever tried on this website, but this CAME OUT SUPERB! TOTALLY EASY and TOTALLY TASTY! I couldnt believe I actually made it. Very flavorful, and juicy. I used thick cuts of pork loin chops that I got on sale at Ralphs, and followed the recipe exactly. Hubby didnt have to pretend to like it, because he truly did LOVE it! Even my picky 7 yr old son loved it.

Slow-Cooker Barbecue Ribs

This was TOTALLY easy and it was SOOOOO GOOOD! Im a horrible cook - I louse up EVERY recipe I try. I cant believe how easy this is. I cant believe I made it! It was soooo yummy. I followed the advice of using 1/2c ketchup 1/2 bbq sauce. I read another reviewer that said it was a big greasy mess - I think as long as you trim the fat before cooking, it works just fine. Excellent recipe! Im making MORE next week!
