Married to a very unpicky husband and although I'm pretty senstive about what I put on the dinner table, he would never complain. Newly a housewife with a 2 month old baby girl and loving it! So much more time and energy to find and create great recipes.

I love holiday meals...Thanksgiving, Christmas, New Years, Easter, July 4th...its awesome to suprise everyone with what one little cook can do.

I often don't have the ingredients I need and so I "substitute" and it turns out all wrong. But hey, a girls gotta try right? :)

Microwave Popcorn
For the brown paper "lunch bags" (5x3x10inch) I bought I had to use 1/4 cup of popcorn kernels because with 1/2 cup my popcorn burned. Make sure the bag is upright and not on its side. I just have regular salt and popcorn salt would be so much better! All in all I'm pretty fascinated with this beautiful fresh bowl of popcorn sitting in front of me!

Fluffy Pancakes
FINALLY the perfect pancake recipe!! Fluffy and tasty. I will probably add a little vanilla and maybe sugar OR fresh fruit like bananas or blueberries. But gosh darnit I'm so happy about this one. I've made way too many flat pancakes in my cooking life!

Energetic Strawberry Smoothie
Refreshing as is or great base for a stronger drink. I used a small can of Sugar Free Red Bull and added 2 packs of Splenda and about 5 large frozen Strawberries. If I wanted alcohol some rum or vodka would be nice in this. If you want to add more liquid try a non-alcoholic strawberry daquiri mix. Also the taste will greatly vary depending on which energy drink you use, but if you use your favorite you shouldn't be dissappointed. I will make this before many big party nights!
