These got rave reviews from my son. I made a few of them with Rollos candies and he especially liked those. I used butter instead of shortening.

Zucchini Pasta II

This was really good. I roasted a red bell pepper, and didn't use the red pepper flakes. I especially liked the combination of the broth, cream cheese, and parmesan.

Rolled Fondant

Fantastic fondant! Taste great and was easy to work with. This was my first time working with fondant and I was worried that it would be difficult. I almost bought glucose at Michael's for $4.99 and then looked at the one ingredient: corn syrup. I decided to use corn syrup instead. I used six cups of sugar to start with and then added more as needed.

Banana Pudding III

This pudding turned out great, very light and creamy. I took another person's suggestion to use only half the condensed milk and use regular milk for the other half. It turned out to have the perfect amount of sweetness, I couldn't imagine it with the full amount of sweetened milk. Also, like others, I filled a small bowl with citrus soda and sliced the bananas right into the bowl and then drained them. I let the pudding sit in the fridge for about 10 hours before eating. Can't wait to make it again on a hot summer day.

Best in Show Blackberry Cobbler

Wow! Absolutely delicious. I used blueberries and a little less sugar on top. Can't wait to try it with blackberries. Very quick to put together, and it didn't need ice cream or whipped cream added.

Scrumptious Strawberry Shortcake

The shortcake has a really good texture, flaky and slightly chewy at the same time, but it isn't too flavorful. My husband loved it but I still prefer a sweeter cake-like shortbread.

Golden Rum Cake

My mom used to make this cake all the time too. I'm so happy that I used the suggestion of someone else and substituted coconut milk for the water in the cake. It turned out fantastic. Also, the idea of taking the cake out of the pan, adding half of the glaze to the pan and returning the cake to soak in the glaze is good advice. That way after you pour the other half of the glaze on top of the cake, it gets fully saturated all over. I used Captain Morgan spiced rum.

Honey Lemon Cookies

These are awesome! Perfect for a tea party. I mixed the grated lemon peel into the glaze, which looked beautiful. I'd add even more peel to the batter and glaze for a more lemony flavor. I made these using Meyer lemons.

Best Big, Fat, Chewy Chocolate Chip Cookie

This is my new chocolate chip cookie recipe. It's very good. love the tablespoon of vanilla - it really makes a difference. They taste great with chopped nuts too!

Luscious Four-Layer PHILLY Pumpkin Cake

Excellent cake even though I really don't like using Cool Whip. Next time I will try it with sweetened whipped cream instead. Mine didn't look so great without the sides frosted, so I used more Cool Whip to frost the top and sides. It looked beautiful before and after cutting, in addition to the great taste!
