Creamed Peas with Bacon

We really enjoyed this although I have to say something was missing. Next time I'll add garlic power, onion powder, etc. But it was quite good and a good stand in for the pub food "mushy peas". I followed others suggestions and added the floor to the pot to cook out before adding the evap milk. Also used fat free milk so aside from the bacon (!), it was a nice healthy side. :)

Shrimp Francesca

Pretty good. I made it just like the directions and it tasted good but was soggy. I was hoping for shrimp with a crunchy topping but the breading was kind of gross. I didn't care about the sauce as we did not eat it over anything. Next time I will pour the butter over the shrimp, then add bread crumbs and cheese and then just enough butter to crisp the crumbs. Might also add panko.

Szechwan Shrimp

Awesome! The flavor is really good and my husband loved it. I agree with others, use fresh shrimp. Really easy. Just cook about one minute, turn and add some cooked, frozen asian style veggies and the sauce (double the amount). Cook until it thickens. Perfect! I added some cayanne as my husband and I love heat, but I'm not sure it was necessary since it was a touch spicier than I needed after that.

Slow Cooker Chicken Taco Soup

I make this over and over again whenever my freezer runs out of leftovers! It's so good as is and the only change I've made is I use mexican style spicy tomato sauce, but it's not necessary. It makes a ton and freezes and reheats beautifully. I did find I need to cook the chicken a little longer before shredding (shredding it before it's fully cooked is much harder) but that's it! Other than that it's a simple, healthy, delicious soup.

Salmon with Brown Sugar Glaze

Fantastic! I've tried many different marinades and glazes, but none came out this well with so little effort. The only thing I did was add some cayanne pepper to the mustard/brown sugar for a little kick. I do not like fish (husband loves it) and I'm constantly trying to find something that will help me work it into my diet and this one is a keeper. I will definitely make it again.
