Easy Broccoli Quiche

Reviewed: Mar. 17, 2008
I used a hash brown crust instead of pie crust - 3 c. shredded hash browns drizzled w/ butter, bake at 425 for 20 min. or until brown - also used sharp cheddar instead of mozz. cheese, 3 eggs & 3/4 c. milk. i thought it was a little bland, but great base! thanks!

Healing Cabbage Soup

Reviewed: Nov. 3, 2007
Good but needed something more. I used italian diced tomatoes instead of italian stewed. The tomatoes may have made the difference. I will certainly make again though.

Black Bean Rice Burgers

Reviewed: Nov. 3, 2007
my meat & pot boy did not like these...however, I really did. Like a few other reviewers, mine did not hold together. my batch made 3 good size burgers; i added bread crumbs to the last burger and it held together great! i added a little cumin to the mix as well. loved the salsa/sour cream mix. next time i'll try yogurt instead of sc.

Fettuccine with Sweet Pepper-Cayenne Sauce

Reviewed: Sep. 27, 2007
Loved it! Hubby gave it a 9 out of 10! Instead of using 1 c of sour cream, I mixed sour cream 50/50 with light plain yogurt. I added chicken to mix too. Served over penne pasta. yum, yum!!! Also added a splash of hot sauce...hubby likes it hot!

Mini Meatloaves

Mine were bland. I used bread crumbs instead of oats; that was the only change I made to the meat.

Pollo Fajitas

Reviewed: Sep. 6, 2007
Great taste & healthy! Next time I will marinate the chicken in a deeper container. I used a glass dish. I served with mexican rice. I used a lime instead of lemon. Served with chunked avocado, cheese, lettuce and sour cream. Delicious!!!

Mexican Rice III

Reviewed: Sep. 6, 2007
This was REALLY good, however, it was mushy. I let it cook awhile. I left out the jalapeno pepper and cilantra. Next time, I will definitely use both. I loved the taste!!! I added a little lime juice on top of my serving and it was delicious!!!! Hubby thought it was okay.

White Cheese Chicken Lasagna

Reviewed: Aug. 14, 2007
my husband's first response when he saw dinner last night was "it has spinach in it!" but then once he tasted it, he rated it a 9 out of 10! absolutely delicious! rather than making the sauce, i used Bertolli Alfredo sauce (2 jars). next time i might add some seasonings to the sauce. i also used an italian blend of cheese in my layering and on top. roasted chicken made it much easier and was delicious! i omitted the parsley and used fresh spinach. the dish is even great the next day! next time rather than chopping my mushrooms, i will slice them. i will certainly be making this dish again!

Artichoke & Spinach Dip Restaurant Style

Reviewed: Dec. 6, 2005
Ok, I'm not sure what went wrong but mine came out pretty bad. I halved the recipe. I used minced garlic, chopped spinach, artichoke hearts, alfredo sauce, shredded cheese (a mixture of white cheeses), parmesan and cream cheese. I had to bake it a little longer than what the recipe called for. Just wasn't good.

Alyson's Broccoli Salad

Reviewed: Apr. 1, 2005
Absolutely delicious! Instead of fresh fried bacon I used packaged already cooked "real" bacon. When I told my bf I was making this he snubbed his nose but then once on the table he tasted it; he ate almost half the bowl.

Actually Delicious Turkey Burgers

Reviewed: Mar. 16, 2005
yes these are actually delicious!!! My bf really liked them -he commented, "these are actually good!" I only made up one burger with this recipe (I made up 2 burgers using the Feta Cheese turkey burgers recipe on this site; these are much better). As a result of only making up 1 burger, I kind of just guessed on how much ingredients to use. I did use the bread crumbs, parsley and garlic. I also added some Montreal steak seasoning to the patty. I left out the onion and egg. I served with home-made steak fries (seasoned with montreal steak seasoning, thyme and oregano), baked beans and broccoli salad. Very good meal.

Feta Cheese Turkey Burgers

Reviewed: Mar. 16, 2005
These were just ok. I used a heaping teaspoon (rather than 2)of oregano. All I could really taste was the oregano in them. Next time I will use less. I used sun-dried tomato and basil feta cheese. I served with home-made steak fries, broccoli salad and baked beans.

Garlic-Lemon Double Stuffed Chicken

Reviewed: Mar. 11, 2005
Made with wild rice and steamed broccoli. I poured the leftover butter/lemon sauce over my broccoli! After reading several reviews I made the chicken with a thinner slice of cream cheese and used shredded mild cheddar. Next time I will put more cream cheese and use a different type of cheddar. Needed a little more something...I did cut back just a bit on lemon; however, next time I will use full amount. Overall very very good! BF gave it an 8 out of 10.

Italian Sausage Soup with Tortellini

Reviewed: Dec. 18, 2004
Very good! My bf gave it an 8 out of 10. I used a different sausage; next time I will try a mild or hot. The soup needed a little kick. I omitted the wine, used fresh spinach instead of the zucchini and used dried herbs. I added more herbs than the recipe requested. Overall a VERY GOOD soup! Loved the cheese tortellini in it! I served it with a fresh salad and italian bread! yum!
