Spaghetti Squash I

Super easy and delicious! I put the spaghetti squash in the microwave, whole, for 10 minutes. Cut it in half crosswise, scoop out the seeds and went from there. I also added about 2 cups of spinach right after adding the tomatoes, which added some nice color as well as additional nutrients. I also used Kalamata olives instead of black and olive oil instead of vegetable oil. Fabulous. My husband and I finished the entire thing! Definitely a keeper!

Peanut Butter Fruit Dip

Excellent! I was a little shy with the cinnamon at first, but don't be. Really adds that extra boost of flavor. I also mixed in a couple tablespoons of Nutella. Delish!

Bacon Cheddar Deviled Eggs

Delicious! I've made these several times and the key to taking them from great to outstanding, is: 1. double the bacon and 2. use Horseradish Cheddar. Keep everything else the same. HUGE hit every easter. I, unfortunately, never have any leftovers.

Baked Kale Chips

Absolutely delicious and super simple too! I actually used butter spray and sprinkled with pink himalayan sea salt. Even my hubby loved them! Thanks for the great recipe!

Marinated Grilled Shrimp

Excellent and SO easy! I took the advice of another reviewer and added 1/4 c. Chili Sauce-- DELICIOUS! I highly recommend doing so! I also subbed diced tomatoes for the tomato sauce, reduced the vinegar and oil and increased the basil and garlic. What's more- I through everything in the skillet at the same time and served it over Quinoa that I made with some white wine, garlic and lemon. Super good. Oh, but if you do it this way and do NOT like spicy food (we do!) then I recommend reducing or eliminating the cayenne. Enjoy!

Summer Salad with Cumin-Crusted Salmon

Fabulous! My picky husband cleaned his plate! I didn't have OJ concentrate, so I used the juice + zest of 1/2 fresh orange. Delicious! I didn't have pine nuts or feta either, but used toasted walnuts (delicious) and will definitely try pine nuts and feta next time. I also cut the oil in half for the dressing, which left it a little runny, but was perfect for flavoring the salad with a bit less fat. This will be a new staple at our house.

Libby's® Pumpkin Cranberry Bread

I've been making this bread for years and it's become a favorite for my family AND my husband's family! I've found that using fresh, whole cranberries works the best. As it cooks, the berries burst and the result is pure deliciousness! I've also made it with walnuts and pecans, both of which are fantastic. For a more dessert-like taste you can also butter the loaf pan, then coat with cinnamon-sugar.

The Best Banana Pudding

Fantstic! I made this for a small dinner party, and everyone had seconds. I'm making it for another party Friday night, but this time will try using chocolate pudding mix and adding some strawberries... excuse me, I'm starting to drool...
