Apple Pecan Cobbler

Reviewed: Mar. 29, 2013
I love apples so I had to try this and was not disappointed. I did alter it a bit because I think that's the purpose of reading user reviews. I used brown sugar in the apples (3 granny's and 2 golden delicious) and some maple syrup, a little bit of water and flour plus the cinnamon and mixed the apples up before adding the topping. I decreased the sugar in the batter and used 1/3 cup of white and 1/3 cup of brown and added 2 more tbsp of evaporated milk. I also added the pecans (finely chopped, just a personal preference) to the batter instead. I meant to add vanilla but completely forgot and I think it turned out fine without it. The cooking time was pretty accurate for my oven. I love what one reviewer said, "Call it cake, call it cobbler. Who cares? It's delicious!" Agreed!

Creamy Au Gratin Potatoes

Reviewed: Mar. 22, 2013
These were absolutely fantastic!!! The few changes I made were to use a 2 qt. casserole dish, sliced the potatoes a lot thinner which cut the cooking time to just under an hour, 2 cups of medium cheddar cheese and I diced and sauteed the onions (not a huge fan of whole or crunchy onions, just personal preference) and added to them to the cheese sauce before I did the layering. I had 5 layers and after adding the sauce to a layer, I would move the potatoes around a bit with a fork to get the sauce evenly distributed. I also let the potatoes cook for the last 10 minutes without the foil. I will make these again and again! Next time will try the breadcrumbs. You have to love user reviews!

Chicken Cordon Bleu II

Reviewed: Jul. 15, 2013
This is Heaven on a plate. I've made it a few a times now. The first time I followed the recipe to a T and it was wonderful but since then I've tweaked it to my personal preferences. The best advice I can give is to double up on the sauce, it's incredible! I've used wine and chicken broth and it's great both ways but the wine is definitely my favorite. I like to prepare the sauce separate from the chicken and finish the chicken off in the oven but yet again it's great both ways. I also use an egg wash on the chicken before rolling the chicken in flour which I add a bit of garlic and onion powder to as well as the paprika. I've tried bread crumbs but prefer it with the flour. Lastly, a bit of Dijon mustard on the chicken before adding the ham and cheese is really good! This is a great recipe and fun to make your own and it's a huge crowd pleaser!

Pancakes I

Reviewed: Sep. 1, 2013
I honestly don't know what more you could ask for in a pancake. I tried the recipe as written and they are amazing. Since then I sometimes add fruit or a bit of vanilla but this recipe is wonderful as is.

Heavenly White Cake

Reviewed: Nov. 2, 2013
I made this for a friend for her birthday who loves white cake. It came out wonderfully. So moist and fluffy which is rare for a white cake. Made it as written with the exception of adding another 1/2 cup of milk. I'll look no further for a white cake recipe because you simply can't do better than this.

Chef John's Smothered Pork Chops

This is the third smothered pork chop recipe I've tried and I'm going to stick with this one. Simply delicious! Made the recipe as is and wouldn't change a thing. Try it, you won't be disappointed. Thanks Chef John!

Onion Rice

Reviewed: Jul. 15, 2013
This is a really good and simple side dish. Like another said add pepper to taste but other than that great as written but also goes well with yellow onions.

Mom's Favorite Baked Mac and Cheese

Reviewed: Jul. 15, 2013
Great recipe but since I have made it a few times I have to just give it 4 stars because I had to tweaked it. I leave out the onions altogether now. I have tried many different cheeses and have discovered that this really needs American cheese in it to be creamy especially when eating it the next day. The combo of cheeses that I like the beast so far is 1 cup each of Monterey Jack, Mozzarella, American and Cheddar.
