A Good Easy Garlic Chicken
I made this recipe just now and it was awesome. I used fresh garlic cause I didnt have any garlic powder. I browned the chicken with the garlic but forgot to lower the heat so I burnded the garlic. No biggie, I scraped it out and added 3T of butter/flour and poured in 1c of chicken broth. Served chicken with rice and gravy. Very good. I added salt and pepper to taste as always.

Hot and Spicy Tofu
Very Good but i made some changes and substitutions! I used a red and green bell pepper. Added a zucchini and made a galic paste intsead. I also added a dash or two of ginger. And used rice vinegar instead. And I didn't have a green chile. Probably should have doubled the sauce too since I served it with potato noodles. I also pressed and froze the tofu and pressed again to make it extra "meaty." Sprayed with Braggs Liquid Aminos and fried with sesame and olive oil. Sauted veggies with same oils. And sprinkled with toasted sesame seeds. Wish I had used more spice though. Its not as spicy the next day :(

Chili Rellenos Casserole
i don't know what i did wrong. maybe i didn't cook it long enough. but it was watery and the texture wasn't all that great. i think next time i will cook longer and lay tortillas on bottom and in btw layers. oh and i did get rid of the milk and used enchilad sauce instead and half the amount of cheese. i took everyones advice but it wasn't that great.
