Fruit-Stuffed Pork Loin

I was looking for a recipe for my boneless pork loin and I found it with this. I did substitute a box of Stove Top with my own sauteed' onions & celery for the stuffing but followed the exact recipe for the brown sugar paste that's on top and this was wonderful! I cooked it in a 325 degree oven for 2 hours. I probably should have followed the recipe and only kept it in for 1 1/2 hours because once the meat rests, it will keep cooking. There were not enough juices to make gravy but we didn't miss it. The meat was moist and flavorful. The whole family loved it and I'll be sure to make this again.Thank you!

Braised Chicken Breasts in Tasty Mirepoix Ragout

Yum!!! Just made this for dinner tonight and it was a hit. I did everything according to the recipe except left out the bay leaves (personal preference) and only used one quart of chicken broth. Chicken was fork tender and the mirepoix was such a yummy topping. I used an apple Riesling wine. It is a bit time consuming but not difficult at all. Thank you for a new idea for dinner ~ will definitely make again when I want to impress our dinner guests.

Jewish Apple Cake

I did not add the glaze, didn't want or need the extra calories as the recipe already has 2 cups of sugar and a cup of oil but I found the cake to be on the dry side.Maybe if the apples had been stirred throughout the batter rather than just in the middle. Maybe a 1/2 cup of added applesauce would have been a good addition for moisture.
