Chef John's Mushroom Gravy
I made this gravy tonight, and although the flavor was excellent, it was WAY too salty as written in the recipe. I was worried about that extra pinch of salt to help "draw out" the water from the mushrooms, which only made it worse when simmering down the broth and concentrating the flavors. Next time, I'd use either unsalted butter and/or low-sodium beef broth. I used it over mashed potatoes and buttermilk meatloaf, which paired perfectly with the gravy.

Awesome Pasta Salad
Just made this for dinner tonight -- letting it sit in the fridge for a couple of hours before we dig in. While tasting it after combining all the ingredients, I felt it needed a bit more Italian flavor, so I added a few shakes of that spice combo (Italian Seasoning). I debated about adding red onions, and in the end, I decided against it since there were so many intense flavors going on anyway. I did leave out pimientos since I don't care for them, and added way more salami and pepperoni since we're dedicated carnivores here in this household. Also added a jalapeno havarti as the cheese, since couldn't find provolone at the store. Magnifico!

Cheesy Baked Eggs
The recipe came out beautifully! I basically followed the recipe except substituted butter-flavored cooking spray for the butter, but looking at the ingredients, felt it might be a bit bland. So, I took some suggestions from others and added some rosemary, onions and about half of a Serrano pepper. Also threw in some garlic powder (about 1 tsp), and about a tsp of baking powder to make it fluffier (which someone else had advised). Even with all those strong flavors, the final product had a very subtle co-mingling of the flavors. It definitely needs some type of topping -- we used the sour cream, salsa and sriracha.
