Cowboy Cookies III

Yummy! Next time I make them I will make them bigger! I made them using a 1/2 TBSP measuring spoon and they are kid sized. But I like em big. I will be making more tomorrow and maybe the next day! New favorite chocolate chip cookie recipe for when I have butter and eggs!

Cream Cheese Frosting I

Tasty frosting but not the consistency I was looking for. Maybe I made a mistake because I couldn't get it to look like the pictures in which the frosting was used as decoration. Mine slid off and lost it's edges quickly.

Moist, Tender Spice Cake

Made exactly to the recipe, except for a tiny mistake. Stop mixing when the mix looks like tiny pebbles, I kept beating until it turned into a thick paste. I think this may have compromised my moistness and texture. But it was still good andnext time I might add some more spices. I frosted with Cream Cheese Frosting I, which is delicious but a bit runny.

Gingerbread Biscotti

mmm... Made these exactly like the recipe states with all the spices being heaping measurements since I do like a tasty biscotti. I appreciate recipes that call for oil since it is so much cheaper, and these were delicious regardless. And it sure is nice and crispy but not tough and crunchy. The dough wasn't hard to handle, but even easier when I added oil to my hands. I didn't have to cook them as long and maybe that is related to my elevation but it was only shorter by a minute or two. I have made these for a family Halloween dance and for a bake sale so I haven't dipped them yet in white chocolate like I plan to the day before. They are still amazing and can't wait to try them dipped.

Good Old Fashioned Pancakes

Very nice and fluffy! My kids and I ate them all up! Good flavour and texture, although admittedly I used olive oil instead of butter like I always do. I am sure using butter would only make them tastier.

Whole Wheat, Oatmeal, and Banana Pancakes

So glad to see a good recipe for a healthy pancake that will give my kiddos energy for the day. Great texture that definately fills you up. My kids love them. MAde more than I expected: I got about 14 2-3 inch pancakes and 5 5-6 inch pancakes. Going to freeze the big ones for breakfast on a school day so I can toss them in the toaster. Only gave 4 stars because I think I'd like more banana flavour, so next time I might add 2 bananas and they weren't my favorite with just maple syrup, BUT I really loved them with jam spread on top! My daughter says she's stuffed!!

The Best Rolled Sugar Cookies

Taste great! nice texture. I halved the recipe only because I didn't have a big enough bowl! LOL! But it was pretty hot today and hard to work the dough, even after chilling it. I had to roll it out between pieces of parchment. Glad I made the cut-outs on parchment paper too so I just picked out the inbetweens snd slipped it on the cookie sheet. I had my kids press the shapes so I rolled out 1/3 of the dough for each of them. Lots of fun and an appreciated before bed snack. For the last 1/3 of the dough I spread Nutella on it and rolled it up, popped it in the freezer for 30 mins and sliced it 1/4 inch slices before baking it. All the leftover inbetweens I smushed together and put it in the freezer for some rainy day.

Bacon-Wrapped Asparagus

mmmm... delicious! Only thing I did differently was wrapping them. I wrapped four together and was able to avoid using toothpicks by sticking one end of the bacon between the ends then wrapping to the other end. The bacon did cook faster than the asparagus so if you like your asparagus cooked well you might want to blanch them before wrapping them my way. Oh I guess we also used the glaze on them as we did with the pork kabobs.

Lasagna Toss

YUM! My kids ate it, it was easy to make and quick to bake. I added mushrooms for something extra. It can be simplified if you do like I did and fry twice as much sausage meat and freeze half of it for next time. And I am sure you could use any left-over pasta and veggies. I'd love to try dooubling it in a bigger casserole and freezing the leftovers. Very filling!

Best Ever Pie Crust

Um, tasty yet greasy crust and it did NOT cook well at all. I even pre-baked the crust for 15 minutes but it remained doughy through 1.5 hours of baking my quiche. I did not want to ruin the whole thing so I suffered with an under baked crust. If you aren't planning on baking your pie for 4 hours or so then pre-bake it well first. Bottom line: I will not be using this recipe again and I'll stick to the recipe on the Crisco box.

No Bake Peanut Butter Pie

I made this with no changes. I really liked it, but I think I would give it 5 stars if there were some kind of inclusions like Reese's Pieces or Peanut ButterCups, maybe even chopped up Oreo Cookies. I will add something next time but can't give 5 stars since it's not in the recipe. Still very good and worth the tiny effort to make it since it is very easy. Liked that it made 2 pies so I could give one away =)

Banana Oat Muffins

Mmm... Moist, delicious. I added half the banana last so I had some nice banana blobs, otherwise followed directions exactly. I always freeze over-ripe bananas for banana bread but this may be all arround better and easier! Except maybe if I am craving a toasted banana bread. Did you know that the smell of banana bread is the number one aphrodisiac for women? My house still smells wonderful! Oh I also got 20 muffins out of this recipe, but they weren't overflowing the cups.

Salmon Patties I

My daughter went nuts for these! She asks for them all the time now. I will make them for her lunches since Daddy doesn't care much for fish, and me eigther... lol.. I am glad there is a quick and easy way for me to help her enjoy fish, and for the brain benefits too!
