Lime-Glazed Pork Chops

Exactly what I was looking for: easy, extremely tasty, and different. This is one of those dishes where the flavors meld together perfectly. Excellent, gourmet quality pork chops.

Coffee Liqueur Ice Cream Pie

I cannot believe how easy this is and so few people have tried this wonderful dessert. By using a premade Oreo cookie pie crust and Cool Whip, this was a breeze to make for Valentine's Day. We both thought it's one of our favorite desserts. If you like mud pie, you'll love this!

Sausage-Stuffed Eggplant

If you like eggplant and Italian food, you will love this dish. It was so tasty. Good thing I doubled the recipe so I could have leftovers. Wish I could pass it off as my own creation. I'm very discriminating and will serve this to company, even without the added sauce at the end. Thanks so much, Tanya.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Ouch! I made these tacos the day before the previous review was written. Wish I had cut the chipotle down to one pepper. Very hot, even omitting the cayenne.

Lemonade Cake II

If you like lemon meringue pie, you'll love this cake. I dropped the amount of sugar to 1/2 cup, as previous reviewers recommended, and heated the lemonade and sugar in the microwave for a minute to totally dissolve the sugar before pouring it on the cake. What a tangy, flavorful, simple cake! Thanks so much.

Garlic Chicken Fried Chicken

I read this recipe's notation from the original submitter who added on 5/31/05 that the recipe was supposed to be in tablespoons, and not teaspoons for the garlic. I cooked it using TBL. and it was great. It was so flavorful and very crispy on the outside. I used cube steaks because I love chicken fried steak and it was way better than restaurant quality. Make sure to use up that leftover dry mix for the gravy. Yum!

Pan-Fried Asparagus

It's amazing how much tastier the asparagus is when it's pan-fried with garlic butter, versus steamed with butter added afterwards. I doubled the amount of asparagus and it was perfect. Wonderful asparagus!!

Homemade Cranberry Applesauce

Excellent recipe for turkey or pork. I served it with roast pork and everyone loved it. It took longer to cook than expected, but it was worth it. Also, I couldn't find the cranberry/apple combo JUICE (only the 20% juice) so I bought a bottle of cranberry juice and a bottle of apple juice and combined them. Now I have the second half for my next batch. It does make a huge portion, though.

Sweet Corn Tomalito

Indeed, this is exactly like Chevy's! I was a bit troubled about the lengthy cooking time and knew it could be accomplished in the microwave in a fraction of the time. These settings and times will differ from microwave to microwave, but I cooked the tomalito, covered, for 7 min. at 30% power and then 4 min. at full power. It came out awesome after only 11 minutes. Experiment, because this stellar recipe warrants being made often! I originally rated this in June 2004 but wanted to make sure new viewers saw my microwave directions because they are soooo easy.
