Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Quinoa and Black Beans

We liked this a lot. I omitted the black pepper, added a tiny bit more cayenne and saved the salt for a sprinkle at the end. I also used a can of white Northern and a can of black beans because I didn't have two cans of black. I think it could use a bit more cilantro than called for. The listed cooking time was perfect!

Fabulous Zucchini Grinders

These were good. I sauteed mushrooms with the zucchini and used Italian mix cheese. I forgot the red pepper flakes and they were still very good.

Spinach Enchiladas Verde

This was amazing!!! I used queso fresco instead of Monterey Jack and made it the casserole way. I layered sour cream/salsa mix, cheese, tortillas, repeat. I baked it with extra green salsa on top and sprinkled on the remaining queso fresco 5 minutes before it was done. I didn't use the whole of the spinach because I was worried it would be soggy, but I wish I would have used all of it. The spinach was great. I will definitely make this again!

Potato Pesto Feta Pizza

This was awesome. I combined this recipe with some from other sites. I omitted the Fontina used fresh grated Parmesan. I also added sun-dried tomatoes, which I feel really added to the taste. I used Pillsbury ready-made dough, which made it really easy and made the cornmeal unnecessary. Next time I might add some mushrooms and/or red pepper flakes. So good!

Eggplant Sandwiches

I tried this with the recommended microwave and cooking in the skillet with olive oil. It was pretty good, but a still little soggy. I mixed the vegan mayonnaise with garlic and let those flavors blend for half an hour before serving. My husband loved it. We had it with the garlic mayo, tomatoes, red onion and leaf lettuce.

Grilled Apple and Swiss Cheese Sandwich

Love this recipe. If I'm in a hurry, I used sliced cheese instead of grated to cut down on the mess and time. This is a great version of a classic.

Swiss Chard with Pinto Beans and Goat Cheese

This is a great recipe. I've used pinto, black and cannellini beans and I prefer the cannellini. I've added thawed frozen spinach when I didn't have much Swiss chard in the garden and it was still really good (though not as good as the original recipe). I serve over rice with hot sauce. It's good reheated, too.

Stuffed Shells III

Love these. I always use 2 jars of pasta sauce and add sauteed chopped spinach and mushrooms. I usually cut the cheese a little bit and sprinkle on top rather than mixing it in with the sauce. Delish! Freezes very well. Just cook it halfway and then freeze, thaw in fridge overnight and bake for 30-40 minutes at 350.

Asparagus Potato Soup

This was excellent. I used condensed milk in place of cream and mashed it all together a little after adding the milk/flour mixture. I added some frozen peas at the end and a lot of pepper. I omitted the bacon, grated some fresh parmesan on top, and used two large vegetable bouillon cubes rather than chicken. Delicious!

Pesto Polenta Lasagna

This was excellent. I'm eating the leftovers now and loving it. I layered this right into my toaster oven dish, which is great for a hot day when you don't want the oven on. I did everything on the recipe and a few extras. Between layers of polenta I added mushrooms, garden fresh tomatoes, slices of an over-sized zucchini that I didn't know what else to do with, and an extra layer of cheese. I did an additional layer of pesto on top and used marinara sauce as a bottom layer on the pan. I also used sun-dried tomato pesto since it was all I had on-hand. I made it for a couple of friends and they absolutely loved it, as did I. I'll be on the lookout for more polenta recipes now!

Spaghetti Squash I

Ew. I'm sorry, but this was a waste of spaghetti squash. Vegetarian writing here and I won't try this one again. The sweet squash paired with Greek and Italian flavors was just not good at all. Good luck with this one, though!

Wendy's Quick Pasta and Lentils

This was quite quick and easy. I used 5 cloves of garlic, two small onions, fresh spinach added just after the onions and garlic, the entire can of diced instead of crushed tomatoes, omitted the salt and was liberal with the parm. Next time I will do all of that the same and also reduce the amount of pasta. I might also add some mushrooms or other vegetables; this seems like a good dish to throw everything in with. I think it would be awesome with some boca meat crumbles. Also, I let the sauce and pasta sit together for the recommended time, but wouldn't worry about that if in a hurry. I'll likely be making this again.
