Scrambled eggs are my Everest. I can make far more complicated meals that taste just fine, but scrambled egg perfection always seems to be just out of my reach.

My mother makes a mean dish of mashed potatoes. I try and try, but mine always pale in comparison.

My veggie lasagna is pretty excellent, if I do say so myself.
My cooking tragedies
I once used condensed milk rather than evaporated to make scrambled eggs. I don't recommend the method!

Cheese Ravioli with Fresh Tomato and Artichoke Sauce
This was okay. I usually love artichokes, but it was too much in this recipe.

Quinoa and Black Beans
We liked this a lot. I omitted the black pepper, added a tiny bit more cayenne and saved the salt for a sprinkle at the end. I also used a can of white Northern and a can of black beans because I didn't have two cans of black. I think it could use a bit more cilantro than called for. The listed cooking time was perfect!

Fabulous Zucchini Grinders
These were good. I sauteed mushrooms with the zucchini and used Italian mix cheese. I forgot the red pepper flakes and they were still very good.
