Awesome Grilled Cheese Sandwiches

I almost feel silly for rating a basic grilled cheese sandwich "recipe". I guess I'm more rating the technique! I've never ever thought about trying to do grilled cheese in the oven but when feeding a family of 6, this recipe has been a life-saver. I can cook all the sandwiches at once without having to haul out my electric griddle. Also, the flavor is amazing - perfectly browned bread and gooey, melted cheese.

The Big Easy Jambalaya

I was a bit skeptical using a boxed mix but considering I'd never made jambalaya before, I was nervous to try anything else for my Mardi Gras get together. This was absolutely delicious, easy, and was gone so quickly I was shocked. My brother-in-law used to work as a chef in New Orleans and didn't even guess that it was from a box :)

Slow Cooker Corned Beef and Cabbage

Simple and delicious! I've always done my corned beef on the stovetop but will never go back. This turned out just as well and had so much more flavor. My corned beef didn't come with a spice packet so I just added some whole peppercorns. Absolutely mouthwatering and enjoyed by all!

Swiss Chicken Casserole I

Huge hit in my house - even with my 4-year old who barely eats anything. Seriously, this is the first casserole I've seen her truly enjoy. I took the suggestions of a few others and added in my own recommendations. I spread a bit of the condensed soup on the bottom of my baking dish and then placed the chicken. Sprinkled it with garlic powder and pepper, then poured the liquid over. I used shredded swiss along with a bit of mozz which I think added more flavor to the dish than I expected! Mixed the melted butter with the stuffing (GREAT SUGGESTION) and then baked. Delicious, moist and tasty.

Baked Chicken Nuggets

I never thought I'd give a baked chicken nugget 5-stars but this was amazing!!! Incredibly flavorful, tender and loved by the entire family. I made a few tiny modifications: added garlic powder and pepper. I also cut the chicken pieces a bit smaller than typical nuggets so that it was almost like popcorn chicken. Delicious! I can't wait to eat the leftovers on salad with honey mustard dressing.

Baked Spaghetti

Absolutely delicious. The only thing I changed, based on all of the reviews, was to use an additional can of spaghetti sauce (I used two cans of Hunt's 4 Cheese). With extra sauce we still had a firm consistency - as in, able to cut and serve with a spatula. My husband and 4 year old INHALED this the night I served it as well as for lunch the next day. It makes quite a lot for my tiny 3-person family so we froze half of it. It froze and reheated wonderfully the following week :)

Artichoke Baked Chicken

DELICIOUS! It's always a good thing when I can please my husband and 4 year old with one meal. Based on reviews and our preferences, I made the following modifications: substituted sour cream for half the mayo; doubled the "sauce"; added 1tbsp. minced garlic; added a few tablespoons of milk to make the sauce easier to spread and a bit more moist; sprinkled chicken with salt, pepper and garlic powder (didn't have garlic pepper). Also, I cubed the chicken instead of using whole breasts since I find that easier to eat and serve. I used regular canned artichoke hearts (drain and squeeze dry!) but might try marinated next time. I also might try adding in some diced roma tomato for color.

Golden Rum Cake

Absolutely FANTASTIC. I tried this on a whim since I needed to bring something to a "Caribbean" theme party. It was gone before I could even have a piece myself. I've made it quit a few times since and have never brought home leftovers. I did as others suggested and simply tipped the cake out, put the glaze in the bottom of my pan and then put the cake back in to soak up all the glaze. HOWEVER, one thing I would recommend is recoating your pan with butter before doing this. I use a nice, non-stick bundt pan and it still sticks. Definitely make this one day in advance since the flavors are ever so much better the next day. I also have also made the glaze lighter by using half the required alcohol.

Pork Tenderloin alla Napoli

Absolutely delicious! I took other reviewers' suggestions and doubled the sauce. I'm really glad I did because I served this over pasta. Didn't have fresh rosemary so I used dried. Also, it didn't look like 2 romas were enough so I added in an additional to beef it up a bit. Next time I'm going to add onion and capers along with a bit more garlic along with capers. I should also mention that this reheats beautifully!

Slow Cooker Pepper Steak

Delicious! If you want your meal to look like the photo, definitely add the peppers latera nd do larger slices rather than chopping. I like mine melting away so I put in at the beginning. Next time around I'm going to use diced tomatoes instead of stewed since the pieces were a bit too large for our taste. I served over rice but the leftovers are just as delicious. I used the steak cold in salad and it was yummy!

Black Hills Golden Egg Bake

Delicious!!! This was a huge hit with both my husband and my 3 year old - and you know it's a winner when you can please those two :) I usually hate when people review a recipe without following it directly but I didn't have sausage or monterrey jack cheese. We're also trying to eat lower fat so I made the following modifications: eliminated the butter and used cooking spray; used 2 cups 2% shredded cheddar (one cup mixed in and one sprinkled on the top); used low-fat cottage cheese; used 5 eggs and 1 cup egg substitute. I'm looking forward to playing with this recipe by using different ingredients.

Mediterranean Pasta

HUGE hit in my family! I agree with a prior reviewer: if you don't like greek/mediterranean flavors, it's not worty trying/reviewing. Delicious and easy to cater to your own tastes. The combination of flavors is amazing. I do admit that I left out the bacon (sheer laziness about cooking it) but didn't miss it. I also used kalamata olives because we happened to have them on hand.

Cottage Cheese Chicken Enchiladas

"Authentic" or not, these were delicious! I was a bit hesistant to try (cottage cheese in enchiladas???) but am so glad I did. Everyone, including my 2 year old, enjoyed this. I highly, highly recommend another reviewer's suggestion to cook the chicken in the crockpot. I'll post again because I swear these might not have been as delicious without this recommendation: put frozen chicken breasts in crockpot, add diced onion, 1/2 a beer, sprinkle of cumin, oregano, black pepper, garlic cloves and cook on low 5 hours. The chicken was so moist and flavorful.

Chicken and Broccoli Alfredo

Very quick and easy dinner. I might try it with canned chicken next time since the sauteed chicken cubes didn't have much flavor. Also, I will definitely add more milk since this was slightly too thick for our tastes. Otherwise worth keeping in the rotation. I liked another reviewer's suggestion about adding a can of diced tomatoes with chilis....that might add a fun kick.

Roast Sticky Chicken-Rotisserie Style

Oooooh, my, what heavenly chicken. This was loved by everyone in the family. Letting it sit overnight made such a difference. I cooked one large roaster and had to cook a bit longer than noted but I'd accounted for that. I did kick up the heat to 350 for about an hour in the middle of the cooking time. I highly recommend this recipe.

Fast Chicken Soup Base

Absolutely the best chicken soup base I've ever made! I left out the vegetable oil since the skin seemed to add enough fat on its own. Also added a few more carrots and celery than called for. Made my own "rotisserie" chicken in the crockpot which saved a trip to the store (make three balls of tinfoil and place in the bottom of your crockpot. Rub whole chicken with whatever spices and place on top. Cook on high 4-6 hours depending on size of chicken). Definitely a keeper.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

HUGE hit with my family. What a delicious combination of flavors. I took the advice of other reviewers and used canned tomatoes since the fresh ones I'd bought died before I could cook them. Grrr! Actually, I'll definitely use canned tomatoes again just to save money and make the recipe easier. I also cooked on slightly lower heat and then loosely covered the pan after searing the chops on both sides. I think this helped keep in some of the moisture. I'm not a big fan of pork chops so I'll probably try this again in the future with chicken.

Chicken With Mushrooms

Delicious!!!! I followed suggestions of others and this recipe got rave reviews from my family. I sauteed the mushrooms in a teeny bit of olive oil with some fresh minced garlic and a splash of white wine (don't overdo them!). I used swiss cheese instead of the mozzarella and am really glad I did because it gave the dish a more interesting flavor. I mixed the chicken broth with a can of reduced fat cream of mushroom soup. Including the soup makes for a nice gravy that goes well with rice or pasta on the side. Next time I'm going to try skipping the egg bath/bread crumb dip before browning the chicken just to make the dish a bit lighter. This is definitely a keeper.
