Slow Cooker Carnitas

Amazing! I made the roast at home and shredded it, saving most of the liquid and then put the whole crock from my slow-cooker in the fridge. The next day I took it to a tequila tasting party, plugged in the slow-cooker and *viola* -- the star of the show. Everyone begged for the recipe so I made a batch of the rub and gave out tins of it for Christmas. I did not use bay leaf and I used chicken bullion in water instead of broth. Yummy!

Bread and Butter Pickles II

Amazing!!! I didn't have any bell peppers so I used a few hot banana peppers from my garden and it was just enough spice to balance the sweet. So good. My husband and I just ate a whole small jar in 15 minutes. Thank you!!

Holy Smoked Bacon and Mushroom Penne

Good base recipe. But after reading the reivews about reduction and soggy bacon, I took the ingredients and did my own thing. Here's what I did: Crisped the bacon in a pan and removed. Dumped all but a Tbs of grease and fried mushrooms in pan for a minute. Added 1/4 cup of chicken stock and scraped up the bacon bits. Added broccoli* and garlic* and covered to steam veggies. Added very al dente pasta to pan and 1/2 cup more chicken stock. Reduced by half and finished w/ a dash of cream and some parmesan. Then I sprinkled the bacon on top and served with more parmesan. Soooo good.

Slow-Cooker Chicken Tortilla Soup

Very very good and soooo easy. i just used leftover chicken from last night and threw it all in the crockpot before bed. Took it out of the fridge today and viola! dinner. Didn't bother with the tortilla strips tonight but I think I will in the future... and add some sour cream too. Thanks for this easy recipe.

Chicken In Basil Cream

Very tasty. I used fresh basil from the garden and used a clove of garlic too. I don't think I let my cream get warm enough b/c my cheese all clumped up, but the flavor was still good. I salted my chicken and will not do that next time as there was enough salt in the sauce. Served over penne with peas added to the sauce. yum!

Greek Pasta with Tomatoes and White Beans

Lacked serious flavor. I think I'd add sauteed onion and garlic next time. Also I used frozen Spinach which I didn't like so will definitely use fresh if I make this again. Quick and easy and satisfying though.

Pickled Asparagus

turned out great. I had 5 lbs of asparagus from the farmer's market and no idea what to do with any of it. I pickled half (the skinnier ones) using this recipe. I used fresh dill from teh garden in place of dill seed and I also doubled the recipe. So good! Especially in out bloody mary's.

Portobello Sandwiches

Great idea to run with. I made a few changes... I added balsmic soaked and broiled onion slices and used a basil mayonaisse. Served with spinach leaves on a toasted bun. Sooo delicious.

Coconut Shrimp I

Awwwesome! This was so easy and delicious. We fried ours in peanut oil and a mixture of honey mustard, horseradish, and orange marmalade was perfect for dipping! Yum!

Chocolate Rum Balls I

So easy! I could not believe that they came together as well as they did. Very good. Next time I will use a variation on the regular rum. Also- wish I would have planned ahead and bought more than one box of Nilla Wafers so I could make more than one batch.

I personally do not like snickerdoodles but I made these for my boyfriend and he very much likes them. His only comment was that they were not very chewy inside but I may have baked them a minute too long.

Raspberry and Almond Shortbread Thumbprints

FABULOUS!!! I used vanilla in place of almond and had them turn out just fine. The dough just needed some extra work to come together. We used Seedless Black Raspberry Jam and they are so outstanding! Yum yum yum.

Pecan Crescents

These were so hard to find! I knew what I was looking for but had no idea what they were called. I made them into 1 inch balls instead of crescents. The dough seemed too dry at first but they turned out wonderfully. I really had to be carefule rolling them in the sugar- maybe I should have let them cool more but one crumbled. Wonderful though. Just the recipe I was looking for.
