Oatmeal Soda Bread

The cooked part of this bread tasted great! If you have an oven that takes longer than most recipes call for. Don't cook this for 40 minutes, accept the fact that the top is brown and think the middle is cooked through. It will not be. Disappointed! I will try this again, with consideration of cooking 45 or 50 minutes. I have hopes for this one.

This recipe was as much fun to make as it was to make. It takes time and patience. However, with a family like mine hanging on to their ethnic routes, this was a nice touch for Christmas. I struggled with them a bit, and while them mau not have been ready to present at a bake-off I received great reviews. A good cookie to be served with tea and nice conversation.

Polish Style Lasagna

This did not rise as much as I had hoped. It was tasty and got great reviews from the family. But I had hoped for a little different outcome. I would deffenitely make it again.

Classic Baked Mostaccioli

I freelance with this one a bit. I double the Mozzarella. For cheese lovers, do this. Put 8 oz in with the pasta and sauce and the other 8 on top of the dish. I also, sprinkle a bit of extra Romano on top. Sautee a little onion and garlic in olive oil, before browning your meat in with it. If that is to your taste. This is a fabulous dish!

Aztec Casserole

Instead of using whole pieces of chicken, I cut them into pieces. This has made a difference. I have used hard tortillas, as I had trouble finding soft. However I would reccommend this recipe to anyone.

Breakfast Casserole

This is a very tasty breakfast dish. My wife and I are still trying to get over the fact that chicken can be served with breeakfast. Why not??? What are eggs after all? This is a very good dish.
