Downeast Maine Pumpkin Bread
I made this as written and the second time made a few alterations based on what I had in the house and on other reviews. Both breads came out very good. But since the second had less sugar and fat, I'd make it that way from now on... My second batch had 1 cup of dark brown sugar and 1 cup of granulated sugar instead of 3 cups of granulated sugar. I did, however, fold in 1 cup of semisweet chocolate chips at the end. I also used 1/2 cup of oil and a 1/2 cup plain non fat greek yogurt as I was low on oil and had no applesauce. Using the greek yogurt still produced great results while cutting the fat. The bread was still VERY moist, rose nicely and tasted great. I noticed no difference without the extra fat. So I will do this again. I also added a little more cinnamon and slightly less salt. Other than that, followed everything else about the recipe. Either way - the recipe as is and also reducing the fat and sugar is a good base.

Zesty Slow Cooker Chicken Barbecue
Made this last night and served on a whole wheat bun with roasted baby potatoes and corn. My VERY picky 4 year old liked it and that says a lot considering she hates trying new food and only seems to like chicken nuggets and pizza! So this will go into our rotation. I followed the recipe except I halved it for three chicken breasts, used fresh chicken instead of frozen, Sweet Baby Rays Original BBQ Sauce, Newman's own light italian dressing and seasoned the chicken breasts with garlic and onion powder and a little salt and pepper. I will make this again. Easy recipe, easy cleanup. I had no trouble with the end result being watery. After I shredded the chicken (an hour before done, as suggested by many reviewers), it was perfect. I cooked this on high for about 3 and a half hours.
