Carrot Coconut Lime Soup

If done right this soup is SUPER YUMMY! First, I made my own veggie broth with chopped up carrots, celery and onion. I added an all natural chicken base to it but you could just add some salt too. I also used Thai Kitchen brand red curry paste. I was assuming this is something like what the recipe called for. Last but not least I doubled the fresh ginger. Used a stick blender to blend so I didn't have to pour it into a belnder. AMAZING!!!! Just a note...most brands of "lite" coconut milk is just watered down coconut milk. If you want "lite" just use a little less of the coconut milk and add water. Save money!

Tortillas I

I make this weekly. I carefully measure everything and weigh my flour but it seems to turn out just a bit different depending on the humity/temp in the house. If they seem dry I just add a few more tablespoons of water and the tortillas turn out just fine. 95% of the time the recipe works out perfect as written. Our kids love these and will no longer eat the store bought ones.

Amish White Bread

I've been making this bread daily for almost a year now. My kids love it. Most days it is gone by lunch. I like the light clean taste with the touch of sweet. The bread is not a sweet bread though. Its just balanced. I also like the simple ingredients that I always have on hand. The only ingredient that I might use different from other people is I always use high quality favorful salt.

Four Egg Yellow Cake

I've tried many different cake recipes and this one is the best so far. I did use cake flour instead of all purpose and the cake came out light, moist and perfect. I also weigh my flour to get an exact measurement.

Taco Seasoning I

I no longer use the taco seasoning pouches at the store thanks to this recipe. This blend is easy to make and just enough for a pound of meat. Love it! Thanks for sharing.

Refrigerator Bran Muffins

Crusty White Bread

I read the reviews on this bread and decided to try it. I make homemade bread at least once a week. This bread was totally goopy and not like any bread dough I've made before. I added well over 1 cup of flour to the dough to even get it to a consistency I could kneed. I did see other reviews that had to add flour but why would someone rate a recipe 5 stars if it wasn't quite right as written? I weigh my flour so I'm sure I added exactly the correct amount. This one seems WAY off.

Grilled Swordfish with Rosemary

I made the recipe just as is except marinaded in a plastic bag for about 3 hours so the marinade covered the fish completely. The fish was amazing. Super taste through out and moist even when done. Everyone loved it. My picky 11 year old ate it right up.

Cinnamon Swirl Bread

Great recipe. I weighed my flour and didn't need to add anything at mixing time. Everything was perfect. Nice soft tasty bread. The dough was easy to work with. I didn't roll the bread tight enough and there were gaps. Follow the recipe and roll tightly! A keeper.

Belgian Waffles

Great and tasty recipe. I loved that these stayed crispy even after sitting for a while since I'm usually the last person to eat! The prep wasn't as bad as others made it sound. I used three bowls total and two cups. I used a deep but regular waffle iron and this recipe made 22 waffles. I loaded them into the freezer but it might be worth noting that "makes 8 waffles" is a bit of an understatment. My family of 5 ate all they could eat and we still had 15 of them left.

Breaded Hamburgers

I made this recipe as is but I must have used a baking dish that was too heavy and hamburger that has too lean. If making this recipe I would suggest cooks use 80% or more fat and a baking dish that is a simple casserole or thin metal. I used 85-90% lean hamburger and a stoneware baking dish and the hamburgers were dry and the onions didn't get cooked. The stoneware is heavy and probably didn't heat up quick enough to cook the onions before drying out the lean hamburgers. I have high hopes for this one so I will try it again. I hope this helps others.

Oat Applesauce Muffins

If you want non-sugary, soft, non-crumbly and healthy muffins this is the PERFECT recipe. I made these muffins for my 10 month old daughter and very picky 3 year old son and they LOVED them. I used white flour because I was out of wheat, I used organic no sugar added applesauce, I decreased the brown sugar to about 1/4 of a cup packed and then loaded the batter with fresh ripe good quality blueberries. I made mini muffins and each muffin has 3 to 4 big blueberries in it. They were perfect for little ones. If you are having trouble with this recipe try weighing the flour. Once I started weighing my flour to measure, all my recipes come out perfect. Since these muffins have very little fat you have to grease the pan completely or they will stick. Also, if you are looking for full flavor and sweet this is not the recipe for you. You can add spices and more sugar as suggested if you want that.
