Kathy's Roast and Vegetables

I used a 5 pound roast and followed the instructions exactly as written. It came out fantastic! My family raved and raved. You must make white rice with it. It's very simple to make and so yummy.

Mushroom Potatoes

Made this exactly as instructed except that I used only one teaspoon of salt to reduce sodium. They came out fantastic! My family was having seconds and raving! It really serves about 9 - 10 good portions. I made this as a side dish to a pot roast with white rice, everyone just kept complimenting me!!!

Cranberry Orange Bread

I followed the recipe exactly- I find it very funny when people modify the recipe then rate it poorly, LOL. But anyway, this bread is nice. Not as moist as I thought it would be- but it has a nice tart flavor. My husband didn't care for it because he dislikes the taste of orange marmalade. This does very much taste like orange marmalade. But that just means more for me =)

Mouse's Macaroni and Cheese

I really hate it when people change a recipe and then give it a bad review when it didn't turn out right. Pretty lame- anyway, this was a fantastic recipe. The kids and adults at my table raved about it. I followed it exactly as described without changes and everyone loved it. It does get the cheese absorbed if you let it sit for an hour and I think it is better that way; sticky and yummy! But if you like it very creamy, served it right after coming out of the over. Either way, it's great.

Buttery Corn Bread

wow, does this need another 5 star rating? Very tasty, the perfect sweetness, moistness, and texture. Very good. I followed the recipe exactly and could not stop eating it. This one is a good one to use during Thanksgiving without giving it a test-run. It's that good.

Spaghetti Salad I

This is very zesty- a great side dish to foccacia sandwiches. However, I felt it was missing just a little something, like green peppers. I'll try adding finely chopped green pepers to bring out the colors next time. great recipe though. My husband flipped for it!

Focaccia Bread

This bread is NO JOKE! I made it with Whole Wheat flour and it was just outstanding! My husband and I flipped for it. It does have alot of cheese on top but it is just very yummy. The bread it not too thick or thin either. WOW! I will make it again.

I used whole wheat flour and did not brush with butter to make it a little healthier. I loved it and so did my husband. I try making it a little thinner than your initial urge to place it on the flat grill. I think it turn out less gooey and a little more crunchy. I also spayed it with PAM spray to substitute the butter. Great recipe to use with other Indian dishes.

Chicken Tikka Masala

I made this for my husband and made Chicken Korma for myself. My husband LOVED this recipe. It is much too spicy for me but he said it was excellent. I would definitely cut the Cayenne pepper in half if you don't like spicy but if you are making it for someone who loves spicy, this is a good one. One tip: instead of grilling the chicken, I put it in the broiler for about the same amount of time and instructions. It turned out as good as I had hoped. My husband flipped over it!

Chicken Korma II

This is a great recipe. I absolutely love Chicken Korma and have spent alot ordering it from different Indian restaurants. I decided to try making it myself. This is a very mild recipe- not as sweet as I have tasted before but it is quite nice- I think all the ingredients were just right and the cooking was very easy. My husband flipped over it!

Sarah's Salsa

This salsa is excellent! I have never made salsa and I made it for a party- I got many compliments! One thing, I substituted the diced tomatoes with fresh tomatoes. However, I did use a can of diced tomatoes with diced bell peppers and then measured the fresh diced tomatoes using the empty can. Put the tomatoes cut into large pieces in the blender a few at at time and pulse chop (take them out). DO NOT OVER CHOP! Chop the onions separately but not too fine. With the blender empty, put in the canned tomatoes, then put all ingredients in- use a spatula to mix the ingredients a bit and then pulse blend for a second. Mix with spatula again and then pulse blend again. Do this until you get the consistency you want. I made mine just chunky enough and everything was blended well! YUM!

Chicken Coconut Curry

Absolutely Delicious- It does have a lot of curry so if you do not like curry, stay away. However, if curry is your thing, this dish is to die for. The coconut flavor is not overwhelming and the rasins and apples fit so well- the dish is not too sweet!

Key Lime Cookies I

I decided to use a frosting/pastry bag to make the intial batch and made small disk-shapes with peaks. They tasted great! To be experimental, I decided to attempt to make balls as instructed but I added more flour to the rest of the batch since the dough with the inital ingredients is extremly wet! I added just enough to make the dough workable. The taste of the final cookies was doughie and I threw them all out. I suggest just using the original required amounts and instead of making balls, just use a frosting bag and make small peaks (make sure they are small, around and an inch across, max). You can fit many together since they do not expand too much! Besides being less messy using the frosting bag, they look better! Also, do not even attempt to use a cookie gun/press. It was a disaster for me. The dough is just too soft for anything but a frosting bag!
