Baked Potato Soup

Like Sarah, I also diced the potatoes and cooked them in the chicken broth. When the potatoes were ready I used my potato masher to mash them up and blend them into the broth. Other than that I followed the recipe exactly and it was great. Definitely going into my rotation. Only thing I would do different is add one more potato and not mash as much as I prefer it to be a little chunkier.

Grilled Cheese Sandwich

Go to a grocery store with an instore bakery. Most of them make some kind of artisan bread. Buy that bread and slice for the sandwiches. Use slices of a nice smoked sharp cheddar or smoked Gouda or whatever kind of cheese you like. Now follow the recipe. When done, serve these with hot tomato soup. Now that's pretty close to heaven.

Acapulco Chicken

This was awesome. I added a more chili powder, probably triple or even the quadruple the amount called for. Thought I had tomatoes, didn't so I used 1/2 can (14oz size) diced tomato. This was so good. Served it in warmed up corn torillas like a fajita. Two nights later when eating the leftovers, I put some cubed avocado and cilantro on the table to garnish the fajitas. Later on wished I had some sour cream too. Oh well, next time as there will be a lot of next times with this recipe.

Salisbury Steak

Made this the other night and it's a keeper. Served with mashed potatoes but think next time I'll serve with rice and spoon some of the sauce over the rice. Yummy! It was a little sweet for me. I would probably cut the ketchup in half and increase the water next time if it was just me but my wife loved it as is. Because of the sweetness I'd like to give it 4 1/2 stars. Since I can't do that I'll go for the five star rating due to ease of recipe.

Lisa's Easy Chicken

I saved this recipe some time ago but never got around to making it. What a fool I am! Looking for something different last night and tried this. Very, very good. The only changes I made were to season the breasts with a little kosher salt and ground black pepper. Also didn't have the seasoned salt. Used cherry tomatoes (sliced in half) instead of one large tomato. Turned out fantastic. This is an excellent recipe.

Monterey Chicken with Potatoes

Awesome! My wife loved this dish and so did I. Just tweaked a couple of things. Mixed the cilantro with the salsa but added the cheese separately. Put the salsa mixture of chicken breasts only and cheese over all. Yummy!

Delicious Grilled Hamburgers

Absolutely great! I only made a couple of changes. I left out the seasoned salt and used kosher salt and ground black pepper. I also added some onion powder. Make these a lot now. I recommend this recipe to others quite often.

You know, there where was just something missing for me. I actually thought it rather bland. However, my wife loved it! Go figure. I would only give three stars, but considering the wife, finally gave it four. Will try again.

Carne Asada Tacos

Absolutely tasty! Prefer a bit more heat but as recipe states: salt, pepper and crushed red pepper to taste. Next time a little more crushed red pepper should do it for me. If you're searching for something of mexican flavor, stop right here, you've found it. An excellent dish.
