Cauliflower Soup

Wow-loved this low fat, tasty soup. Cooked cauliflower in a water/bullion mix. Smashed with a potato smasher and added a celery and garlic saute from another pan. Added pepper, dill and kale- because I had it prepared -and cooked through for 15 minutes. Fabulous texture

Simple Beef Short Ribs

So good- I didn't have beer so used extra beef stock and a splash of red wine. Easy to prepare-I'm all into simple and tasty.

High Temperature Eye-of-Round Roast

OMG. 3 lb roast for 21 minutes at 500. Then shut off oven and kept in for 1 hour. Removed from oven and tented with foil. Seasoned with onion soup mix, drizzed olive oil in pan and on roast, added small red potatoes cut in half and sliced onions over it. Only way to make a roast.

Dump Cake I

Dont do what I did- I baked in a smaller cake dish thinking it would just take longer. The result: nuts on top burned but cake id not cook through. Will try again in future

Slow Cooker Spare Ribs

This is why I love this site! So delicious. A few changes madevwere: 1/2 onion, little more brown sugar, ketchup instead of tomato soup. Cooked for 6 hours, then broiled a few minutes. Thanks to all the cooks out there who help me feed my four teen sons and husband. This was great.

Restaurant Style Chicken Nachos

Way better than restaurant. While the oven was preheating, i put the chips in to crisp. Once oven preheated, I removed and added a can of refried bean first and then the chicken and cheese ( put 12 ouncs not 8) When all melted through, sprinkled with scallions and sliced olives. My 4 teen sons loved this snack!

Cheese Lover's Tuna Casserole

I don't typically make casseroles and decided to do this because I needed something quick (and nutricious) for my boys. Very nice dish- creamy, mellow , comforting. I substituted one can of tuna for a can of condensed clam soup and added one cooked bag of frozen broccoli. I used 1/2 the amount of cheese. Better than take out!

Parmesan Sage Pork Chops

Orzo with Parmesan and Basil

This is truly an excellent side dish- very tasty and so easy to make. I added a pint of cherry tomatoes and scallions during the last 5 minutes for a beautiful presentation!
