Zucchini Ribbons With Goat Cheese

Great recipe. I have made it as stated and also in a alternate version. Sauteed zucchini with olive oil, garlic, salt, pepper, and shallot. Finished it off with a sprinkle of lemon juice and goat cheese.

Stuffed Acorn Squash Supreme

Great inspiration but totally altered the recipe and made it for only 2. 1 cup cooked white rice, 3 turkey sausage links (italian), 1/2 cup colby jack cheese, 1 package of sazon goya seasoning, and 1/2 cup chopped broccoli. Good with a dollop of sour cream.

Fig and Goat Cheese Pizza

Always looking for untraditional pizza recipes. Love goat cheese and figs. Used fresh figs which were excellent. Don't skimp on the onion or dried spices.

Slow Cooker Pork Chops

I really enjoyed this recipe; however I did add quite a few other ingredients. The extra ingredients are many of the flavors in a Polish stew recipe that uses sauerkraut and pork (Bigos Stew). I first seasoned the pork chops with seasoned salt and garlic powder. Then I browned the pork chops for approx. 2-3 min. on each side. The additional ingredients added to the crock pot were diced tomatoes, onion, 4 cloves of roasted garlic, 2 slices of chopped bacon, 1 tsp of marjoram and caraway seeds, and a tablespoon of brown sugar.

Black Bean and Corn Salad II

I really enjoyed this recipe. I madeit to bring with me camping and it was a hit. The flavors meld even more as it sits; however, the avacodo gets very soft. My friends really enjoyed this recipe! I did make one change, I added about 1/2 tsp of cumin to the lime dressing to jazz it up a little.
