Charles Meat-Lover's Slow Cooker Spaghetti Sauce

Great! This is a delicious sauce. The only change I made was to add more vegetables to make it more of a meal. The extra veggies made the sauce sweet enough that it didn't need any sugar.

Great as written. The sauce ingredients can be cut in half. It makes a lot. More raisins can't be bad either.

Fruit 'n' Spinach Salad

Chicken with Chipotle

Very good, this recipe kept the chicken legs moist and flavorful.I spiced the legs up with cajun red rub and started them on the charcoal grill for extra flavor.

Apple-Stuffed Acorn Squash

This was a big hit with my squash loving family. I found some small squash with a flat bottom at the local Farmer's Market And cut the tops off so that everyone had their own. The only change I made was to salt and pepper the squash cavity with salt and pepper.

Great Mac and Cheese

Gooey and delicious for sure. I didn't know if the pasta should be cooked first. It shouldn't. I seasoned the onions with salt and pepper and added a minced clove of garlic. I also added some flavor to the extra sharp cheddar with a couple of splashes of hot sauce. Great!

Will's Spicy New Orleans Catfish Fries

My yankee super market didn't have any corn flour so I substituted fine corn meal. But they did have fresh farm-raised catfish fillets. I served it as a sandwich on toasted hard rolls slathered with creole tarter sauce. With cole slaw on the side it made a great dinner.

Dynamite Bourbon Ribs

Just to kick things up a bit I threw in a heaping teaspoon of crushed red pepper. While the ribs were on the grill I reduced the marinade on the stove.

Cajun Dirty Rice
