Zucchini and Eggs

Fast, simple, delicious. Added onions and mini portobello mushrooms, sauteed with the zucchini. Served along side thick slices of summer tomatoes from the garden......mmm!

Taco Salad I

Very good! Many of the reviews suggest not adding the chips until serving. I disagree. I crush the chips into small pieces and I think the softened chips add a great flavor and help to thicken the hamburger mixture. I do reserve chips to top with when serving to give it that extra crunch. I also prefer catalina dressing, but the french dressing works fine. I do NOT mix the lettuce into the ground beef mixture. I prefer it served on top of crisp, cool, shredded iceburg.

Dill Pickle Meatloaf

I wasn't crazy about this but my husband loved it. I added some chopped pickles to the meat mix based on other reviews but would leave them out next time. The sauce has plenty of pickle crunch. The leftovers made great sandwiches the next day. So good, I would consider making just for that purpose!

Scalloped Cheese Potatoes

Great recipe as is, but we also enjoy it with these changes: Cut recipe in 1/2 (just 2 of us), mix 1/2 cup sour cream with the soup, add 1 thinly sliced sweet onion with each layer. I have used other cheeses too. My personal preference is a mix of whatever I have on hand. Yummy, cheesy comfort!

Banana Sour Cream Bread

Great recipe, very moist. I used an electric mixer and it was a little cake-like. Someone suggested that hand mixing creates a denser result. I will try that next time. Still five stars for excellent flavor, though!

Oven Fresh Seasoned Potato Wedges

Loved this so much, I made it again the next day! 1st time for wedges, 2nd for smaller roasted potatoes to serve with a roast. I added some basil and a little red pepper to the seasoning mix and it was delicious! Goes great with Apple Butter Pork Loin from this site.

We loved this! It smelled wonderful while baking and made everyone in the house hungry. Looks impressive on a platter as well. I used a 3 lb pork loin and cooked for 3 hours. It was perfectly cooked. Served with Oven Fresh Seasoned Potato Wedges and Alyson's Broccoli Salad from this site to RAVE reviews from my family and guests.

Great salad. My 14 yo step-daughter raved "This stuff is awesome!", a REAL compliment. :) Have made several times now following the recipe pretty closely. I have also added hard boiled eggs and served as a main course for a cool, quick,no-cook summer meal. Yummy

LOVE these! They have become my favorite cookies and are often requested by my step-daughters as well as my co-workers. I usually substitute walnuts for the pecans because I think they go great with coconut. Great recipe!

Zucchini Quiche

Easy and delicious! This is a wonderful basic quiche recipe and it is easy to make substitutions, depending on what you have on hand. Great as is, but last night I added cubed ham, baby bella mushrooms and onion along with the zucchini. Too late, I discovered I didn't have ricotta cheese but it turned out great without it. You can use any cheese you have on hand. I like Kraft's italian blend but once made it with shredded pepper-jack and my hubby loved that! Thanks for a great recipe!

Easy Ham and Cheese Appetizer Sandwiches

I made these last year around the holidays when I had a lot of country ham to use up. Took to a few gatherings and had lots of positive comments. Didn't realize just how well they went over until this week... I've received 2 requests for the recipe and 1 request to bring these to a holiday get-together! When people remember a dish a year later, it has to be good. I left out the onion and used country ham. Thanks for a great recipe!

Easy Corn Pudding

Took this to a family dinner at my new in-laws and got rave reviews, even from one who claimed not to like corn pudding! Make sure you add 2 eggs, gives a better texture and adds richness to this dish. Great comfort-food!

Pretzel Salad

Best recipe for this dish I have tried. Fixed this for a friend who is on a diet using reduced fat cream cheese, Smart Balance for the margarine, Splenda for the white sugar, and sugar-free jello. Not as tasty as the original but not too bad either!
