Honey-Glazed Pork Chops

Wow! We really enjoyed this. I had a beautiful pork loin roast that cut into eight nice chops. I used olive oil instead of the spray. I doubled the recipe for the "glaze". To that I added 3 tablespoons of unsweetened applesauce, 1tablespoon of unsweetened butter and 2 dashes of cinnamon. After placing browned chops in my 9x13, I deflated my skillet with 3/4 cup of beef stock ( to balance out the sweet). To that I added the honey mixture and simmered for maybe 3 minutes. I poured that over my browned chops and baked for 15 minutes with a foil cover. These were great with mashed potatoes!

Cannoli Filling

This didn't rate for me. It was very wet, lumpy and sweet. I wanted to use it to fill dark chocolate cupcakes but had to jump to plan B. Germans!! Thankfully they had some "grown up" cupcakes left! My 74 year old mother wouldn't have enjoyed cookie monster cupcakes at her birthday dinner. Still searching for that smooth canoli filling recipe.

Easy OREO Truffles

Delicious! I made them with both white and semi-sweet chocolate ... I prefer the semi-sweet chocolate. These are simple, fun to decorate and somewhat impressive!! They look so pretty on a tiered serving plate at the holidays!

No Bake Sugar Free Cheese Cake

I have made this twice, both times for diabetics. My best friend's husband really enjoyed it as did the whole family! I had to make it again before the end of my visit so he'd have some for himself! I stuck one in my brother's fridge after Father's Day. It was a surprise for him (his wife passed ).He also loved it! I used lime hello for one of them and it was a nice tang!

Lemon Leek Roasted Cornish Hens

I love Cornish Hen!! My husband loves leeks. I was prepared to make risotto to serve with these but ended up with a simple wild rice and seared fresh spinach with garlic!!! Devine!!

Pumpkin Fluff Dip

This is a happy addition to my recipe box. We enjoyed this with Apple slices and very thin ginger crisps (Anne's, they come in a small rectangular box and I can always find them at ShopRite stores in the gourmet cookie section. They are inexpensive but you don't get too many in the box. But they are perfect for this dip). I have made this 2 or 3 times, playing around with the ingredients.

Chocolate Pumpkin Cake

I have been doing a lot of baking the last two months (and my scale is showing it)! I really LOVED this recipe and within it I think I have finally found the perfect chocolate spice cake I have been looking for... here's what happened. I started out with a spice cake mix that was about 15 oz. To make up for the difference I added about a 1/2 cup of milk chocolate fudge cake mix from a second box. I added 3 eggs instead of two. I baked it in a 13x9 pan. It took 30 minutes or less. I found a cream cheese icing from a cupcake recipe on this site but I ended up changing that: 1/2 cup butter, 8oz. Cream cheese, both softened.Whipped high and fast. Added confectionery sugar, 2 cups and 2 tsp vanilla... as I continued to mix at medium speed I didn't like the consistency so I opened a carton of heavy cream and slowly poured in about 1/2 cup. Whipped at high speed (kitchen aid) until fluffy! NOT too long... Maybe 45 seconds...to die for!! I kept it in the fridge, three people devoured it in two days! I am very happy I got the results that I did!

Chocolate Spice Cake

I absolutely loved the flavor of this cake! I have been searching for this for years! Okay,the changes I made were simple. I used the spices to my taste. Also, I melted less than 2 ounces of very dark chocolate (83%) and added it to the batter. Unfortunately mine turned out a little dry but I think it had to do with the pan I used. (Nordicware sculpted sheet pan.) Every raved about it with a simple milk chocolate icing. I will try this again tomorrow and add a little applesauce.

Pumpkin Casserole

I will admit that I made this two days ago and have eaten ALL of it myself (except for maybe 3/4 cup). I have it with coffee in the morning. I eat it with a salad for lunch. I eat it by itself and I loved it with frozen yogurt. I adore pumpkin as an ingredient in almost anything. My only change was the sugar, I took it down to 1/2 cup and next time will replace it completely with honey. Oh and I used "White Whole Wheat Flour" by King Arthur's. I always warm it prior to eating. It can serve as a dessert just as easily as a side dish. Thanks for sharing this great recipe.
