Best Black Beans

simple and delicious! i followed the recommendations of other reviewers; drained and rinsed the beans and substituted homemade chicken broth for the liquid. i also simmered for approximately 15minutes to allow more time for the flavors to come together. this was an excellent side dish for dinner last night. i'm generally not a fan of beans, but enjoyed the flavors of this dish. i'll be adding this recipe to the rotation.

Too Much Chocolate Cake

hubby requested chocolate cake for his birthday, so i began a short search and came across this one. 4000+ reviews and 5 star rating made this recipe the chocolate cake of choice. i made some minor modifications, only because the devil's cake mix and instant pudding did not come in the sizes indicated in the ingredients. i used a 16.5oz devil's food cake mix and 3.9oz instant pudding, with success. this cake was extremely moist and absolutely delicious. i admit i was a little skeptical, as i haven't purchased cake mix in a very long time (i prefer making foods from scratch). i also made the satiny chocolate glaze to top off this cake and sprinkled with semisweet chocolate chips, as seen in the pic. the satiny chocolate glaze recipe can be found on allrecipes as well. this is a keeper, for sure!

Baked Asparagus with Balsamic Butter Sauce

Keeper! I rarely review things with a perfect score, but for the simplicity of this recipe and resulting flavor, this recipe is definitely worthy of the five stars. I like roasting vegetables with olive oil and s&p, so I wasn't sure what to expect this time. The balsamic and soy sauce add that extra punch that gives this simple dish the wow factor. In fact, that was literally the reaction I got tonight. "WOW, what'd you do different?" Made just a couple of minor changes: - I did not use cooking spray (not an item I have in the pantry). Instead, I lightly drizzled the asparagus with evoo and tossed, prior to baking. -I melted the butter in a small dish in the microwave, not a pan.

Carrot Cake III

my first carrot cake and it was a big success. i made the recipe as is, other than omitting the pecans from the batter and using different pan sizes. baked the batter in two 8x8 pans for approximately 40mins. the frosting was amazing also. cream cheese and butter... don't think you can go wrong there. i topped the cakes with crushed pecans, making sure to sift the pecans prior to for a cleaner presentation. i will be baking this again over the weekend, since i was only able to have a small sliver to taste and am now craving this. the rest was polished before i could go for seconds. i should mention that i am not a big fan of carrot cake, but this has definitely changed my mind or should i say palate. a definite keeper for me.
