Swiss Chicken

Very good recipe. Great to serve to casual dinner guests. I made a couple of changes. I added about 1/4 cup of frozen thawed & drained spinach and 1/8 cup of Hormel real bacon bits. These two items added flavor and color and made the dish appear a little more elegant. This is our new favorite way to fix chicken.

Country House Bed and Breakfast Casserole

I made this recipe and we loved it. Only change I made was I left the mustard out, and I used real bacon bits on the top. I used the croutons I had on hand which happened to be Texas Toast garlic & cheddar. I wondered about the garlic, but it was wonderful. I am making it again, but in a bigger dish so that there is more leftover. We had a small left over serving last time that we reheated in the microwave, and it heated very well and tasted wonderful even the 2nd time around. Will make this often.

Apple Bars

Very good. More cake like, which we liked. Good flavor and easy to make. I will use this recipe often. My husband is not fond of strong cinnamon flavor, so I did reduce the cinnamon to 1/2 teaspoon and they were perfect for us.

Shari's Streusel Coffee Cake

I am making this now. After reading the reviews, I also used butter. The other change I made is instead of half & half, I used liquid hazlenut coffee creamer. I didn't have walnuts, so used pecans. I did put it in an 8x8 pan. Smelling pretty good. OK - done and cooled a bit. Yummy!

Sausage Mushroom Quiche

This was very good. I did have to substitute a few things. Used a mild venison sausage, used whole milk instead of half & half as that's what I had. I also added about 1/4 cup of thawed spinach. I didn't have a pie shell, so I used texas butter flavored biscuits to make the crust. It turned out very well.

One-Dish Chicken, Vegetable and Rice Bake

I made this for dinner and the only changes I made was I used cream of chicken soup (didn't have any mushroom) and used chicken broth instead of water. I used fresh baby carrots (cooked a little first) and frozen broccoli for the vegetables, and cut up the chicken into chunks. Everything was done including the rice and we liked it. Ate leftover warmed in the microwave for lunch and it was good leftover too. We will make this again as we both liked it, it was simple and used ingredients that I usually have on hand.

Apple Enchilada Dessert

I made my own pie filling using granny smith apples. I reduced the sugars to 1/3 cup each and added some vanilla. It did not thicken as much as I would have liked even with a little corn starch stirred into the water. I will try for a thicker sauce next time, but we did like these and will make them again. Easier than making a pie and tastes like apple pie especially when warm and served with ice cream. Yum

Cheesy Potato Salad

Very nice for a change from the routine potato salad. Only change I made was I used Hidden Valley bottled ranch dressing with the mayonaise for a slight ranch flavor and deleted the sugar. We will make this again.

Grilled Venison Backstrap

We tried this for dinner tonight, used two smaller inside tenderloins, so kept them whole instead of cutting into chunks. I did not have any cider (wrong season) or apple juice, so used what I had which was some applesauce. I used foil at first and did 10 min each side, then removed the foil from the grille for the last 5 min for each side. This was good, it was tender, but we will try it again when we can get some cider. I'm sure it will be even better with the correct ingredients.
