Overnight Apple Cinnamon French Toast

We like this very much. Make sure the baking dish has room for the apple/egg mixture to bubble up and expand to avoid overflow in the oven. I use cinnamon swirl bread and it is delicious! Very easy.

Sausage Barley Soup

Wonderful soup! I used hot Italian sausage, added an extra carrot and doubled the barley, per reviews. Next time I will substitute kale for the spinach because it does hold up better to long cooking (spinach was indeed a little slimy). This was pretty spicy so I imagine you could use sweet Italian sausage and add a small amount of red pepper flakes to spice it up just a little if hot sausage is too hot for your taste. We loved it and will definitely make this again. A great crock pot recipe!

Slow-Cooker Chicken Tortilla Soup

I followed the recipe and although the flavors were great, the soup was extremely salty. We are not a low sodium family but we actually had trouble eating this. I will definitely make this again but cut the salt way down! Can always add more at the end.

Lentil and Sausage Soup

Read all the reviews and just added kale and used andouille sausage. I did halve the salt and that seemed about right. It was great!

Roasted Brussels Sprouts

I always read the reviews before choosing a recipe (that's what I love about allrecipes!). The only thing I did differently the first time I used this recipe was to add some minced garlic. I was concerned about the baking time due to some of the reviews, but we loved the results! At 30 minutes I checked the color and ended up leaving the sprouts in for about 8 more minutes to get those dark, roasted markings. They were not overcooked, in fact, they still had some nice fresh green color. Great recipe! Just use your own judgment and check the color, pulling them out sooner if necessary. They are great hot or room temp, so no worries about timing with the rest of the meal.
