Stuffed Zucchini

We loved this recipe and agree with others, it is very filling especially considering the low calories and low carbs. The zucchini were 10" long. I had browned ground beef left from the night before and used that. The only thing I eliminated were the bread crumbs to decrease the calories and carbs. Baked at 350 deg,45 minutes, zucchini was not mushy, slightly firm, perfect texture for us. Served with rice. Easy meal next time I will use raw meat.

Apple Pie by Grandma Ople

This pie is absoulutely delicious! I served this pie to 10 women at a luncheon and they all thought it was an award winning pie. At our house we make the top crust using cookie cutters. The grandkids love it. We have done turtles, footballs, hearts, shamrocks and leaves.

Quinoa Tabbouleh

Love this recipe. Used only 2 green onions not the whole bunch. Made no other changes but found I needed to add salt when I ate it. Delicious!!

Best Bruschetta Ever

We made this with tomatoes fresh from the garden and basil fresh from the garden. garlic powder instead of the clove of garlic. it was fast, easy and absolutely delicious! It sat for maybe 10 minutes before we ate it on French bread sliced and buttered and toasted in a toaster oven. Love putting the parmesan cheese right in the other ingredients.

Creamy Soup Steaks

We switched out celery soup and used mushroom soup. Delicious! Served it over rice. Will make this again and highly recommend it. Took 40 minutes.

Grilled Garlic Parmesan Zucchini

We eat zucchini 2-3 nights a week when in season. This is the first time we tried grilling them and absolutely love the taste. Our finicky son stopped by for supper the other night and he loved them too. I prefer them sliced 3/8" or 1/4". We never remember to put the cheese on to melt it so we just shake it on at the table. Yum Yum!

Apple Strudel Muffins

These are absolutely delicious! We had tons of apples from our backyard tree and ended up freezing batches of them. I used frozen apples but would not recommend them. The frozen apples left holes in the muffins and they didn't look so good but they were still great tasting. Added walnuts to one of the batches because we love walnuts and they were good but not a huge improvement on the original recipe. We froze the muffins for Thanksgiving morning.

Grilled Marinated Swordfish

My husband's favorite fish is swordfish but I have never been able to eat it. This marinade is teriffic. The swordfish was delicious even to me. I put everything in a ziploc bag and smushed it around during the marinading time. Toss the bag away, no cleanup. Love this recipe.

Broccoli Chicken Fettuccini Alfredo

Maggie's Fresh Raspberry Pie

A couple of reviews said the pie was too sweet. I made two pies the same day. Followed the recipe exactly. One pie was sweeter than the other so I am blaming it on the tartness of the berries. One batch of berries must have been sweeter than the other. Used frozen berries picked from our back yard. Both pies got rave reviews from my children and grandchildren. I made one pie in a heart shaped cake pan and served it for a Valentine's Day celebration. Easy. Everyone wants the recipe!

Iced Tea II

What's not to like? It is a delicious tea. My taste is for less lemon so I used less. Also used splenda instead of sugar. Be sure to mix the sugar or splenda in while the tea is still warm otherwise it leaves lumps.

Slow Cooker Lentil and Ham Soup

Good recipe and so easy. I will make it again. We don't like spices so I left them and the tomato sauce out. We ate it with French bread, it was great for a cool Fall evening after watching an outdoor sporting event.

Delicious - what there was of it. Should have read the reviews first and made extra. Would double the milk/spinach mixture. Served with pasta. Would definitely make it again.

Easy Arroz con Gandules

This is absolutely delicious. The only change I made was to drain the pigeon peas. Oh yes and only cooked it for 30 min. Now that the soffrito is made and frozen it will be a simple recipe for the next time.

Black Beans and Rice

This recipe definitely needs tomatoes as others have suggested. Also more spices if you like it spicy, it is very mild. It is a quick and easy recipe for Beans and Rice. Adding the beans cools it down so I will reheat next time after adding the beans, spices and tomatoes. With the tomatoes it would be a 5 star recipe.

Spinach Kugel

This was absolutely delicious. I did not have the onion soup mix so just sauted the spinach with onion in olive oil until the onion was transparent. I made 1/2 the recipe without spinach and it was still delicious. The next time I would put crackers and butter on the top. The noodles got hard when it was baked. Or maybe just cover it while baking. Can't wait to make this for family and friends.

Old World Escarole and Beans

Delicious - a light soup with a nice garlic flavor. Skipped the red pepper because we don't like it and we didn't miss it at all. Did not find the escarole bitter either. Enjoyed it very much.
