Ginger Bars

These had the texture of chewy brownies - nice! I love molasses, so I enjoyed these bars. Four stars for the barely there ginger flavor. I may try again with fresh ginger and a bit of white pepper.

Slow Cooker Pot Roast

The Ranch dressing and Italian dressing mixes! I would have never tried that combination. When combined with beef broth (rather than bouillon or gravy mix), it make the best gravy. I add onion powder to the pepper and flour, and skip real onion. I usually add potatoes and carrots. Perfect for a cold night, and an easy meal to bring to a friend.

Juicy Thanksgiving Turkey

If you're using a baking bag, don"t forget to vent it (poke it, cut it, whatever) or your turkey might explode. This was SOOOO moist and juicy, my family raved and asked for the recipe!

Rosemary Roasted Turkey

I made this recipe a few years ago, and it was wonderful! There were NO leftovers. After experimenting with other flavor profiles, I've realized this is the keeper for my family. I bought an extra large bird this year so we can enjoy it for days. : )

Pupusas de Queso (Cheese-Stuffed Tortillas)

I had a bit of difficulty getting the masa harina/water ratio correct. High altitude + dry climate = crumbly dough. These took longer to cook and turned out a little tough. I served them with the Calabacitas con Elote recipe from this site, and that saved the dish!

Super easy, and the fresh flavors are amazing together! I bought everything from a local farmers market, which the kids really enjoyed visiting... although they refused to eat the results. My husband, however, has once again re-declared his undying love. Thank you, gema! I'll be making this year-round. : )

Banana Sour Cream Bread

This is my go-to Banana nut bread recipe. Not too moist, and packed with favor! One time I was short on white sugar, so I subbed dark brown sugar for about half the amount... now I do it that way on purpose.

Mexican Sour Cream Rice

Good, easy, and bland. I added more sour cream, a can of drained and rinsed black beans, the juice of a lime to the rice, an extra 1/2 c of sour cream with a tsp of taco seasoning, and some Salsa Verde. Next time I'll leave the sour cream at one cup and bump the taco seasoning. Or add more Salsa Verde to the finished casserole. But I'll make it again for sure!

Squash Casserole II

This was a good way to use up squash, but a bit bland and mushy. I'll make it again when I have another abundance of squash, but will add a liberal aount of seasoning and make it in a shallow pan to balance the crispy top and mushy bottom.

Scrambled Egg Muffins

An easy recipe and a huge hit! The options are endless, and even the plain and simple muffins are gobbled up by the kids. I use a small food processor to easily whip up a batch. The mayo suggestion from another user is divine!
