Lime Cilantro Rice

Reviewed: May 3, 2011
Delicious! I made this as a filling for burritos. I used a little less cilantro and an extra tablespoon of lime juice.

Spinach and Orzo Salad

Reviewed: Aug. 21, 2010
This was good and I will definitely try it again... I did not have any basil, but fresh basil would be delicious! I did halved the recipe and added 1/2 lemon juiced, 1 clove of garlic and I doubled the amount of feta. Tomatoes would also be good in this. I used less olive oil than it called for.

Blackberry Cobbler II

Reviewed: Jul. 4, 2010
Yum! I used 2 cups of strawberries and 2 cups of blackberries. Also added 1/2 t. vanilla and 1/4 t. cinnamon to the dough and 1/4 t. cinnamon to the berries. The dough was a little spongy , I was hoping for more of a buttery crumb top, but everyone loved it!!!

I skipped the cilantro, as I did not have any. I used a red onion and added the cayenne pepper. This was DELICIOUS!!

This was delicious. Next time I will double the spinach. The water chestnuts are a great addition. I served with tortilla chips, pita chips, and veggies.

Cottage Cheese Chicken Enchiladas

Reviewed: Apr. 15, 2010
This was delicious! Next time I will double the meat filling, as I did not have nearly enough to stuff the flour tortillas. Also, I added black beans because we LOVE them!! I only used one can of green chile peppers and that was enough for me. My hubby likes spicy food so he added red pepper flakes. On a side note- he never eats cottage cheese OR will look at it! I had to keep him out of the kitchen as I made this so he did not see it. After he ate two enchiladas, I told him the "secret" ingredient! You would never know it is in there.

Fast and Friendly Meatballs

Reviewed: Jan. 7, 2009
These were delicious! I used the ice cream scoop and it made 9 large meatballs. I also added 1 1/2 t. basil, 1 t. garlic powder, 1t. red pepper flakes, and 1/2 t. kosher salt. Definitely a keeper! Thanks for the recipe!

Sour Cream Coffee Cake III

Reviewed: Oct. 30, 2005
This is delicious! I tripple the crumb filling because I found that it needed a lot more than what the recipe calls for (and that is my favorite part of coffee cake!) Also, this can be frozen and then brought out when needed! THANKS FOR THE RECIPE!

I cannot believe that more people have not tried and/or rated this recipe. I would give it ten stars if I could...it is so good!!!! I think I make them about every other week and every time I bring them somewhere I have SEVERAL people ask for the recipe. These will definitely be a favorite for anyone who tries, in my opinion. Thanks for the recipe:-)

Spicy Garlic Lime Chicken

Reviewed: Jul. 23, 2004
Definitely double the spices for the marinade and either pound out the chicken, use thin sliced chicken, or cut the chicken into strips. We love spicy food and this was delicious! Next I will try making fajitas, as others have suggested, using this chicken. Try making the Black Bean Couscous (from this site) as a side dish.

Black Bean and Couscous Salad

Reviewed: Jul. 23, 2004
This is so good! I made it with the Garlic Lime Chicken on this site...great meal. The only change I made was using one can of black beans...Even though I like black beans I think using two cans would take away from the rest of the recipe. This is quick and easy!! Great summer dish! Thanks for the recipe:-)

Pizza On The Grill I

Reviewed: Jul. 17, 2004
Soooo good! We tried making the dough and it did not work so well...not sure what went wrong...we bought premade dough from Trader Joes (strongly recommended if you have a Trader Joes). You can easily kneed in the garlic and basil to premade dough. We made our pizza Margarita style (fresh mozerella and tomatoes). YUM YUM YUM!

Seven Layer Dip I

Reviewed: Jun. 4, 2004
I recently brought this dip to a cookout and it was a big hit! I did not add the ground beef since some people were vegetarians...it was just as good without! Also, I mixed one package of taco seasoning into the sour cream layer for added flavor. VERY YUMMY!
