Wonderful. Made as directed except I did substitute ricotta for the sour cream. Hubby and I both went back for seconds and wish we had room for thirds!

Catfish Saint James

Very good recipe. Made with catfish nuggets instead of filets. Used whole wheat flour instead of all purpose and cut the butter down to 1/2 cup. The entire family really liked this and called it a 'keeper'. Served with green beans and tomato salad. Thank you for sharing.

Calabacitas Con Queso - Zucchini with Cheese

WOW!! Fabulous dish. I followed the recipe except I drained the corn per other posts. I used Mexican blend cheese (shredded) and cut down to 16 ounces. This will be a regular at our house. Served with the Adobo Sirloin recipe posted here also.

Fabulous. Made as directed in recipe. Just enough heat from the chipolte sauce to enjoy grilled on a warm summer day. Served with Calabacitas Con Queso (Zucchini with Cheese) and a tossed salad.

Very good. Used brown rice instead of white. Prepped the night before, finished cooking the next night. Tender chops, flavorful rice. Have already made this one twice.

London Broil

Skipped the MSG, used olive oil instead of vegetable oil, used red wine vinegar instead of terragon vinegar. Marinated for 4 nights. Cooked out on the grill. All I can say is WOW!!! Fabulous!! Even the kids were fighting over the last piece. Will make this one again and again!!

Garlic-Lime Pork Chops

WOW!! Fabulous!! Used parsley instead of cilantro but followed the recipe to the letter. Marinated for two nights because of schedule conflict and will do it again. Grilled to perfection. My son that does not eat leftovers asked if there were any pork chops the next day for lunch. Thank you for the great recipe.
