Ginger Salmon

I really like the ginger sauce, except I would put it on chicken rather than salmon. I thought the salmon-ginger combo wasn't great, but my mom loved this recipe. That's why it gets a four. It was also really easy to prepare. It's a great idea if you have an extra ginger and you don't know what to do with it. Also, if you have a bit of ginger, peel it, clean it, throw it in a cup and pour boiling water on it. You'll have a delicious and healthy ginger tea!

Beef and Couscous Stuffed Baby Bell Peppers

This was great! I didn't add the couscous because I didn't think it'd be necessary. However, my peppers turned out to be a little bit wet (there was a puddle at the bottom of each one). I didn't mind because I mixed the liquid with some wild rice and it tasted delicious. But next time I'll include the couscous with the beef because I'm sure it would soak up all the liquids! Also, I used tomato pasta sauce instead of juice and it turned out to be a delicious choice! I also used larger peppers so it turned out to be a main course with a side of rice. YUMMY!

Garlic Broccoli Salad

I like this recipe because it puts an interesting spin on a vegetable that I personally find kind of boring. I thought there was too much rice vinegar in this recipe so I would use less next time. I also used almonds instead of pine nuts. They tasted great but I'm sure the pine nuts would've gone better with the golden raisins. I added olives as well. I will definitely make this again!

Maple Salmon

Great recipe! This is perfect and it is guaranteed to impress any guest. My boyfriend can't stop bugging me to make this. It's his favourite dish of all time…This includes the cooking of all the women in his family, hehehe. Keep an eye on the salmon and make sure its not overdone. Salmon comes in different sizes so mine was perfect in less than 20 minutes. Another piece might take 25.

Too Much Chocolate Cake

I did not stray from this recipe. It turned out absolutely amazing. My boyfriend and my mom were in shock. It was perfect. This will forever be my go-to chocolate cake. It's not made completely from scratch but it was so easy to make and the kitchen was not a complete mess after I was done with it. The cake was moist and chocolaty. YUM YUM YUM! I added a bit more chocolate chips than the recipe said because I wanted it to be extra chocolaty. Also, I notice that some people wrote that there's too much oil in the recipe. NOT AT ALL. THIS IS SUPPOSED TO BE MOIST. This cake is heavenly and I am salivating at the very thought of it right now.

Onion Dijon Crusted Catfish

This was my least favourite meal. HOWEVER. I have never eaten non-fried catfish. The taste of the catfish was strong and even though I'm not a picky eater and grossed out by practically nothing, I could not swallow this. I would love to try this recipe with another type of fish.

Chef John's Perfect Mashed Potatoes

Delicious! Oddly enough, I never made mashed potatoes before. This recipe was so easy to follow. I used a little bit less butter and 2% milk. Next time I'll try it with whole milk. It was great. Next time I'd love to add a bit of garlic or green onion and bacon. Great recipe!

Spinach Stuffed Chicken Breast

Amazing! I changed the recipe to lessen the calorie intake. I've made stuffed chicken breast before and this version was my FAVOURITE. Instead of pepperjack cheese, I used crumbled low fat feta. I also added sun-dried tomato. I used low fat sour cream. I didn't do the bacon, either. The final product was a thing of beauty and tasted amazing. I will make this recipe again and again and again.

Green Beans with Blue Cheese

It wasn't great but it was easy to make. I made a few alterations to spice things up a bit and lower the calories. Instead of pork bacon I used turkey bacon. However, turkey bacon doesn't have a lot of fat so I had to pour in a teaspoon of extra virgin olive oil to keep the turkey and green beans from sticking to the pan. I also added sun-dried tomato, which was great with the blue cheese and walnuts. When I'm not on the South Beach diet, I will definitely try it with real pork bacon. I bet it would change the taste drastically. Yum!

Spaghetti Squash I

This recipe is wonderful. I thought the sauce was a tad bland so I added mushrooms to the stir fry and extra tomato to make the sauce juicier. 30 minutes was more than enough time for the squash to get soft. Very easy and fun to make! This will definitely be a regular meal!
