Eggplant -- Easy, Good and Tasty

Reviewed: Jun. 3, 2013
This is a keeper. I made it tonight and doubled the recipe. I followed with suggestions from others (Peeled eggplant before slicing, and sliced to 1/4 inch. Cooked the eggplant for 10 minutes with nothing on it in the oven, then Added garlic to the egg/water mix. Added red pepper flakes & parm cheese to the breadcrumbs)Then dipped in egg mixture & bread crumbs and from there followed the recipe as it said. Everyone loved it.

Avocado Quinoa Salad

Reviewed: Sep. 12, 2010
This was the first time I made Quinoa and frankly was a little afraid the family would not like it...I was right; they LOVED it. My 8 year old liked it just cooked in the chicken broth and my older ones & husband liked it either way. Since then I've also added some athenos reduced fat crumbled feta w/tomato & basil (once its cold and toss)...YUM! Thank you so much for this awesome recipe!!!

Amazing! Just made tese last evening to bring to my niece's bday party today and they were a HUGE hit. Used Buttery Chocolate Cake with 3 different variations for coating. Some w/white chocolate, Dark Chocolate & Caramel glaze. They were a hit w/all ages! This is a keeper and can't wait to play with different glazes for fall holidays & Christmas!

Baked Whole Cauliflower

Reviewed: Apr. 30, 2010
Wow, this was great. Took another's suggestion and cut into smaller pieces & steamed with 1/4 chicken broth. Put in ziplock & dredged with olive oil then put in the dry mixture & baked for 20 - 30 minutes. It was FABULOUS! Thanks for sharing!

Chicken Katsu

Reviewed: Apr. 26, 2010
This was awesome! I made this with chicken tenderloin and had to use more flour, egg, & panko. It was outstanding and even my picky 7 year old like it. I did drizzle Tonkatsu sauce over the chicken & the jasmine rice I made. I followed someone else's recipe for Tonkatsu sauce but had to make modifications to it. This recipe is a KEEPER, thanks for sharing it.

Banana Pudding IV

Reviewed: Nov. 2, 2009
This was the best banana pudding recipe I've ever tried. My sister even said it was better than the one her hubby's grandma used to make and that had her #1 seal until now. This is my hubby's favorite dessert and he LOVED it! My only change was adding a couple of fresh very ripe smashed bananas to the mix & then I layered it in a trifle bowl, otherwise followed exactly. Thanks so much for sharing this fabulous pudding.

Shrimp Etouffee II

Reviewed: Oct. 20, 2009
Wow, this was AWESOME! I did take other's advice and added Cajun Seasoning & Worcestershire Sauce and also cooked it on stove, not micro. Served over jasmine rice and it was outstanding. Will be a favorite shrimp recipe. Thanks for the recipe.

Italian Cookies II

Reviewed: Sep. 30, 2009
OMG, these were AWESOME! My hubby & 7 year old LOVED them and so did I. Had some left over ricotta & threw these together at last minute. These are forgiving as I didn't have quite enough ricotta so I added a little cream cheese to compensate. Used almond extract in the cookie mix instead of vanilla but used vanilla for glaze/frosting. As others stated, after 10 min they don't look cooked, but they are, just check the bottom. They have a cake-like texture and are simply awesome! Thank you so much for this recipe!

Six Can Chicken Tortilla Soup

Reviewed: Sep. 26, 2009
My family LOVES this, I did make a couple of tweeks: used rotisserie chicken as someone suggested & chicken stock instead of broth. Also added garlic powder, chili powder, bay leaf, cumin. Put dolloup of sour cream and mexican shredded cheese to serve and have crumbled up nacho chips available for topping (great use for bottom of the bag brocken chips). My son loves this so much this is what he requested for his bday dinner :-).

Cheesy Sausage Zucchini Casserole

Reviewed: Sep. 26, 2009
This was really good, I did change a few things, per other's suggestions. I doubled the rice (and added more water) and used Jasmine rice b/c that's what we had. Used a can of diced tomatoes, added garlic, basil, oregano and shredded cheddar instead of processed cheese. Added some panko w/a couple of squirts of butter spray over the casserole when putting in oven. Baked for 40 minutes then 1& 1/2 minutes on broil to brown top. It was great and my 2 year old niece even loved it as did my the rest of my family.

Sausage Jalapeno Poppers

Reviewed: Feb. 3, 2009
After all the rave reviews we made this for the Super Bowl. My husband & I were excited b/c we both love jalapeno poppers. However, these were nowhere near as yummy as we expected. They were kind of bland & too much sausage. I may try this again and alter the recipe w/more cheese & less sausage. I did take other's suggestions and used gloves and soaked peppers in water while working with them. Thanks for the tip.

It was tasty but not crunchy as I expected. Maybe I did something wrong but I'm pretty good at following directions LOL and have been cooking for a long time.

Melted Witch

Reviewed: Jan. 31, 2009
After reading so many good reviews I tried this recipe for the kids for Halloween. There was a ton of leftovers and no requests for seconds. I'm not a big sports drink fan but the kids love them; however, it looks like they prefer their Gatorade alone and not in the punch. Was dissapointing.

Grandma's Corn Pudding

Reviewed: Jan. 31, 2009
I liked it, family thought it was ok. I think we were expecting more of a spoon-type corn bread/pudding. Made a lot and I was the only one that ate some leftovers. Will try again and maybe cut recipe in half.

Turkey Tetrazzini II

Reviewed: Jan. 31, 2009
This was very good and very filling. Great new recipe for leftover Thanksgiving turkey. I took some other's suggestions and sauteed minced garlic and onions in olive oil, then added the butter, flour, broth and milk. I also added a small bag of SWEET peas and used whole grain pasta to incorporate some veggies & more fiber in this yummy casserole!

Chocolate-Covered Cherry Cookies

Reviewed: Jan. 31, 2009
These were ok, very moist but a lot of trouble to make. Kept having to put the dough in the freezer for several minutes so that I could work with it to form, otherwise too mushy. Although I thought they were tasty, not too many enjoyed the slight almond flavor in them or the cherry. Would be worth the trouble if everyone liked them but sadly they did not:-(

We made these for a cookie exchange and everyone loved them, even the kids who usually are not fans of oatmeal cookies. The conbo if coconut & chocolate chips were great with these - Thanks for a keeper recipe!
