Maple Pancakes

Jumpin' Chickpeas

Well, they did jump in the pan...but they weren't very crunchy at all (actually, they had the consistency of a raw chick pea - and I cooked them much longer than it said). I might have been expecting too much - I think the term 'snack' led me to believe that they would be something you could make and then take for lunches or's really an eat-it-hot sort of dish. It was okay for what it was - my boyfriend really liked them - but I think those chick peas would have been better used in hummus.

Tofu Parmigiana

Wow! I made this for a cooking class I'm taking and everyone LOVED it (even the tofu skeptics!). I took these suggestions from other reviewers: 1) baked tofu slices first 2) dipped tofu in egg, not water 3) used a jar of pasta sauce instead of tomato sauce mixture 4) Added baked sliced mushrooms (baked them with tofu at the beginning) to the sauce. Very easy and tasty!! Thank you!

Fish Taquitos

This was really yummy! As shark isn't too available here, I used salmon instead and added in chopped green onions before cooking. As I don't have a deep fryer (and prefer not to fry), I skipped that step and just baked them for about 15 minutes(until edges were brown and crispy) - worked perfectly and was still absolutely delicious. Cheesy Acorn Squash

This was a very easy and yummy recipe. I didn't use any celery or parsley (can't stand them) and added a dash of cinnamon (there's something about cinnamon and squash that can't be separated) and it was delicious. Thanks!

Tofu Burgers

Wow! These were fantastic! I changed a few things - used portobello mushrooms instead of celery, swiss instead of cheddar and I baked instead of fried. But they were easy to prepare, easy to bake and soooo yummy! Even my boyfriend ate some, and he's fanatically anti-tofu!
