Deb's Scallops Florentine

Very good recipe. I also used fresh spinach and it turned out great. The only drawback was that it was a little salty for my taste. Not sure if the combinations of Old Bay and cheeses contributed to that or not.

Sweet Potato Casserole II

I've been making this recipe for several years...taking it to office Thanksgiving lunches as well as making it at home...and it always turns out perfect. (I've even substituted canned sweet potatoes and it's still perfect.) In my opinion, this could double as a desert.

Stuffed Green Peppers II

My husband & I really enjoyed this recipe....will be making it again!! The only change I made was not to use spaghetti sauce (not a big fan of it)...instead I just increased the amount of stewed tomatoes and used them and the juice from them to add the necessary moisture. I had extra of the mixture left over after stuffing the peppers and my husband ate the leftovers by just heating it up and adding some homemade salsa to it. He loved it, too!!

Crab Brunch Casserole

This was good, but not great. With it being a casserole, I expected more eggs. I did changed it up a bit and used Old Bay Seasoning instead of the onion and parsley combo. To be honest, I think it was a little overwhelming with the seasoned croutons and the Old Bay Seasoning....it over powered the taste of the crab. I will probably make this again with Old Bay, but will try it w/unseasoned croutons. Guess it's all a matter of taste....my husband loved it.

Beef Nacho Casserole

This is definitely a "keeper" if what my husband and stepkids say is true. I stayed with the basic recipe, but tailored it to our likes. I used diced tomatoes w/green chiles (instead of salsa), and mexi-corn, as well as using sour cream with a whole packet of taco seasoning. I also used corn chips because that's what I had on hand. I also "eye-balled" everything when mixing it up....I just looked for the right consistency when mixing in the sour cream, etc. It turned out quite well and we all enjoyed it.
