Old-Fashioned Swiss Steak

Used fresh tomatoes instead of canned and added garlic, green pepper and thyme. Really yummy sauce!

Easy Indian Style Okra

I loved the flavor, but didn't have enough okra, so I added green beans and green pepper. I also added some Indian spices (Anjwain and Galengal). Served it over quinoa and it was really good.

Emily's Famous Hash Browns

I added salt, pepper and minced garlic to the mix before I fried them. Fried them in a large cast iron skillet and didn't use as much oil as called for (only about 2T). Tthey worked out just fine.

Corned Beef on Toast

My mom always made this version of "SOS" with dried beef on open faced toast. I find it much better with the corned beef. I added a little pepper and served open faced. Yummy

Sole In Butter Sauce

Yummy! Fried the sole in butter (2T) instead of oil, then made the sauce in the pan, using another 2 T of butter with the wine, lemon juice and 1/4 c chicken broth. Mmmm....

Easy Chicken Tetrazzini

Really easy and super tasty. I used homemade chicken broth (because that's all I ever use), skinned rotisserie chicken and extra sharp cheddar and it turned out delicious. I especially liked the fact that there were no onions or garlic in the recipe. My father cannot eat these and when I brought him leftovers (there were lots) he was so happy to have something so yummy that he could eat!
