Overnight Raisin Oatmeal Pancakes

Carrot Oatmeal Muffins

these muffins are excellent- i used a mix of golden and regular raisins. i wanted to bring cupcakes to a party but was afraid the icing would melt since it's warm out, so these turned out to be the perfect fit with the filling on the inside. they are excellent!

Easy Apple Coffee Cake

5 stars for taste, but it was close to getting 4 stars for being very difficult to get out of the bundt pan. I buttered and flowered, but still it broke in the middle. Thankfully it tasted so good, no one cared that it was a little off kilter. With a bit of glaze on top it was hard for anyone to notice but me.
