Butter Fried Parsnips

I loovvved them. Probably not the healthiest way to eat veggies, ... but who cares! I left off the flour, cause I semi-low carbing. Brought me back to my childhood when Grandma used to make 'em. Thanks!

Oregon Salmon Patties

I had a hard time forming the patties -- they were very soft and fell apart. The flavor was good though. I'll make them again, but I'll leave out the liquid from the salmon next time.

Good & simple recipe for a "low-carber" like me. Hint: Grill the chopped onions before mixing them in -- adds a lot of good flavor. You'll like it!

Cola Pot Roast II

Scrumptious roast!! Everyone loved it and wants more! I used Diet Rite cola to save the carbs but it couldn't have been better. This one will be one of our favorites for sure. Thanks!!!

"Great mac and chee, Mom." That was my kid's comment. I agree. I used Dreamfields macaroni (low carb) and ate guilt free. Of course I left off the breadcrumbs, and didn't miss them a bit!

Slow Cooker Chicken Cacciatore

The key here is to use chicken thighs, not breasts. I've made it both ways and it is soooo much more flavorful using thighs. I also add about 1/4 c. dry white wine and a handful of chopped fresh basil. Delish!!

Mom's Cucumber Salad

This salad is terrific with a spicy dish, like hot wings, etc. We love onions, so I added 1/2 c. thinly sliced sweet red onion. The salad tastes even better if you marinade for a while. I'll make thia a lot!

Fried Cabbage II

I was trying to get rid of some cabbage, and found this great recipe. I had to cook it a little longer than 15 minutes, though. I pretty much followed the recipe, other than that. I wasn't bothered at all by the bacon grease like some others. My family rarely eats cabbage, and loved this. Thanks!

Suki's Spinach and Feta Pasta

Great pasta recipe! I used canned diced tomatoes for extra flavor. Other than that, I followed the recipe using a a bag of fresh baby spinach and probably a little more than a pinch of red pepper. I have basil growing in my garden, and I threw in a few chopped leaves - great addition. I'll definitely be making this dish often at my house. Everyone loved it. YUMMMM!

Mijo's Slow Cooker Shredded Beef

A++! I followed the recipe exactly, using diet coke instead of beer (didn't have any) and it is awesome! Lots of flavor - spicy, but not overbearing, and the meat just falls apart. I served it with flour tortillas and pico de gallo (chopped tomatoes, onion and cilantro) and guacamole. I'll make this often for all kinds of occasions. Thanks!

Hmmmm. This was just OK for me. If I make it again, I would use much less Italian seasoning, exchange chopped onions for the onion soup mix, and add more parmesan. I'll probably stick to a more traditional chicken parmesan recipe though. This just tasted a little "packaged".

I didn't love these, sorry. I really had to spice them up to make them taste even remotely like fajitas we get in Mexican restaurants in California. I'll stick to my own recipe.

Apricot Chicken I

I bake a whole chicken and use this a a basting sauce, adding 1/2 c. melted butter to the mixture. I've made this several times and always get fabulous reviews. It makes a delicious, juicy, flavorful chicken.

Prize Winning Baby Back Ribs

We never make ribs without this rub now -- OR without removing the membrane - what a difference that makes. We struggled at first, but finally got the hang of it (hint-use a regular table knife-not a sharp one). Terrific recipe! I cook them in the oven as often as on the grill and they're great that way too!

Glazed Meatloaf I

I've made this many times and have now perfected it with a few improvements. Cut the lemon juice by half, add 1 1/2 tsp. worcesteshire sauce, 1 extra egg, & 1/4 t. pepper to the meat mixture. Add 1/3 c. barbeque sauce and a dash of tabasco to the glaze mixture.

The Perfect Rib Eye Marinade

My husband used this marinade last night on some nice looking rib eye steaks and it absolultely ruined them. WAY too much vinigar - completely overpowered out the flavor of the meat. There are other maninade recipes in here that are quite good. Stay away from this one!
