Quick and Easy Tuna Casserole

Great for a really easy and fast meal. I microwaved the chopped onions (1/2 as earlier suggested) in a few drops of water before adding them. I think they would have not cooked otherwise. I also used shredded cheddar cheese instead of American.

Amelia's Tuna Macaroni Salad

I've made this two or three times and we really enjoy it. I always use frozen peas (I run them under hot water for a minute first). I also put in about 1/4 tsp. dried dill weed. It really adds a nice flavor.

Insalata Caprese I

This was really good. So fresh tasting and simple. I served it as a first course with chicken fettuccini alfredo. It was definitely a hit. I'll make it again for sure.

Barbie's Tuna Salad

Pretty good recipe. The dill and curry gave it a nice savory flavor I've not found in other tuna salad recipes I've tried. Tomorrow will be the true test - sandwich in my son's school lunch!

Braised Balsamic Chicken

I don't like to give up on 4-5 star recipes easily, so I tried this for the second time yesterday, but still don't care for it. I like all of the ingredients separately, but somehow this combination just doesn't agree with me - too overpowering for the chicken I guess. I made only a small amount, as my son and husband were away on a fishing trip. I don't think they would like it either. Maybe there are some suggestions for tweaking from other reviews I should look for.

Asparagus, Chicken and Penne Pasta

This was OK, not great for me. I had a hard time getting anyone esle to eat it, so I ended up having it for alot of lunches. Maybe too dry... I'm not real sure what the problem was. I usually love this kind of dish, but something was missing here. I probably won't make this one again.

Cottage Cheese Chicken Enchiladas

These were really good. Living in California, we have sampled lots of enchiladas, and this recipe was better than I've had at most Mexican restaurants. Definitely my favorite of those I've made at home, and they didn't take much extra time to prepare. The only thing I did differently, is use a 19 oz. can of sauce -- they may have been a bit dry with the 10 oz. size. I beat my son to the leftovers this morning and took them to work for lunch. YUMMY!!

Cajun Pasta Fresca

Fantastic Black Bean Chili

Love it! I used lots of extra spices - chili powder, cumin, garlic salt. Also followed others' advice and decreased black beans to two cans and added a can of corn and some diced green chiles. I'll definitely make this again.

Savory Crescent Chicken

Wow! These are terrific. I made them smaller (using only one crescent each) because I was taking them for a pot luck. I put some heated cream of chicken soup in a small pitcher on the side for topping. They went like hotcakes!!

Spicy Grilled Shrimp

Great flavor. I cut down the salt to 1 tsp. and added 1 tsp. of Old Bay Seasoning (because I can't imaging shrimp without it). Make sure you don't overcook!

Best Black Beans

This is actually my second review of this recipe. After making these beans many many times now, thought I'd post the tweaks that I sometimes make for a slightly bbq version - just a slight variation, but really kicks it up. Simply add 2 tablespoons sweet & spicy bbq sauce and a few dashes of cumin. This is a great side dish for barbecued ribs or chicken. I still use the original recipe when I'm going all tex-mex though.

Mexican Wedding Cakes II

This is exactly what I was looking for. Thanks! Keep in mind that there is no salt in this recipe, so if you use unsalted butter (which I usually do) you'll need to add a couple pinches. I made the dough about a week ahead of time (refrigerated) and they came out perfect.

The Perfect Rib Eye Marinade

My husband used this marinade last night on some nice looking rib eye steaks and it absolultely ruined them. WAY too much vinigar - completely overpowered out the flavor of the meat. There are other maninade recipes in here that are quite good. Stay away from this one!

Glazed Meatloaf I

I've made this many times and have now perfected it with a few improvements. Cut the lemon juice by half, add 1 1/2 tsp. worcesteshire sauce, 1 extra egg, & 1/4 t. pepper to the meat mixture. Add 1/3 c. barbeque sauce and a dash of tabasco to the glaze mixture.

Prize Winning Baby Back Ribs

We never make ribs without this rub now -- OR without removing the membrane - what a difference that makes. We struggled at first, but finally got the hang of it (hint-use a regular table knife-not a sharp one). Terrific recipe! I cook them in the oven as often as on the grill and they're great that way too!

Apricot Chicken I

I bake a whole chicken and use this a a basting sauce, adding 1/2 c. melted butter to the mixture. I've made this several times and always get fabulous reviews. It makes a delicious, juicy, flavorful chicken.

Pollo Fajitas
