Butternut Squash Soup

Butternut squash soup is so versatile it's hard to mess up, but here are my suggestions after many, many times using this recipe. Halve and roast the squash with the 1/2 onion (quartered), 1 carrot (1/2 inch slides), 1 apple (peeled/cored/quartered) and 2 garlic cloves for 45 min. Use chicken broth (reduced sodium) instead of water/bouillon, cut cream cheese to about 4 oz. Add a few pinches each of ground curry and ground ginger with the chicken broth. Stir in 1/2 c. half and half or milk just before serving.

Speedy Homemade Salsa

Great salsa!! I forgot to add salt and was going to stir it in, but decided it didn't need it after tasting it. Used 1/2 T. cider vinegar and juice of half a lime. You might be surprised at my secret ingredient until you taste the result -- squeeze in the juice of about 1/4 of an orange (for this amount of salsa). Learned this hint from a local Mexican joint that has the BEST salsa I've ever tasted.

Mom's Chicken Cacciatore

Followed the recipe mostly to the tee. Only need one cup of flour though. I used a 4 1/2 lb. chicken and 1 c. was plenty. I added the minced garlic toward the end of sauteing the onions/peppers cause I'm always afraid of burning it.

Spanish Rice II

Excellente! Hint - if you rinse the rice before sauteing, it will stay moist and will not get crusty. I used others' suggestions and sub'd bacon grease for the oil, and used low-salt chicken broth instead of water. Didn't have the tomato/green chili tomatoes so just used regular diced tomatoes. Also added about 1/2 t. cumin, and reduced chili powder to 1 t.

Burrito Pie

Super good! Following other suggestions, I added taco seasoning to the meat and layered the refried beans separately alternating with the other ingredients. I did not add the can of green chiles, since the Rotel tomatoes have plenty in the mixture already. Don't think doubling up on the tortillas is necessary - mine came out just right with single layers.

Buffy's Refried Beans

I would have never thought about making these, except that I was out of canned refried beans, and needed them for a recipe. Wow, am I glad I did. So simple, and so much better than the soupy canned kind. I never have lard on hand, so I used canola oil instead. I will never buy canned refried beans again!

Potato Salmon Patties

These were so tasty. I didn't have celery salt, so I added about 2 T. finely chopped celery. The only other change I made was omitting the seasoned bread crumbs - instead, I coated the patties in seasoned panko bread crumbs before frying them. I served them with coleslaw. They didn't need any sauce in my opinion.

Fiesta Fry Pan Dinner

I didn't have instant rice so I used basmati rice (rinsed). I had to adjust a bit, using 3/4 cup rice and 1 1/2 cups water, and cooked for 25 minutes. I put in the zucchini and corn after about 20 minutes so they wouldn't get too mushy. We all liked it. Thanks!

Minnesota Pork Chops

I agree with the others that said the rice is very good, but the pork chops are not so great. I used bone-in chops, but they still turned out very dry and pretty tasteless. I followed the recipe, except used basmati rice. I don't think I'll be making this again.

Best Chicken Ever

This is a great recipe for tasty and moist chicken breasts. I used ranch dressing instead of sour cream, and seasoned the crushed cornflakes with onion powder, garlic salt, pepper and a bit of Italian seasoning. I think sour cream would not have provided as much flavor, but if you season the chicken it would probably work.

Toffee Bars

I'm so glad I found this recipe. My mother used to make these every Christmas, but it's been 10 years since she passed away and I'd almost forgotten about them. This is a perfect combination of sweet, crumbly, chocolaty goodness -- everyone loves them. I followed the recipe exactly, but doubled it for a large group. I used a large cookie sheet (jelly roll pan), and they came out about about 1/2" thick with the chocolate bar topping. I'm going to re-start the Christmas tradition beginning this year!

Easy Chicken Salad

I would have never thought about putting mixed veggies and corn in chicken salad, but this was very good. I used frozen veggies (cooked and cooled) because that's what I had in the house. Otherwise followed the recipe as written. Very quick and easy to prepare.

Beef Spinach Hot Dish

I found this using an ingredient search for ground beef and spinach. I substituted fresh spinach and fresh mushrooms, and cheddar cheese because I had them in the fridge. The flavor was great, but needs some substance. I spooned it over brown rice, and everyone seemed to like it (no leftovers). Next time, I might add pasta to the mixture as others suggested.

This was good for a quick easy meal, and tasted a lot like an old stand-by my mom used to make. I used Italian-style stewed tomatoes which added some extra flavor, I think.

Easy Salsa Meatloaf

Super good. I was a bit skeptical -- never thought of this combination for meatloaf. I rarely stray from my regular meatloaf recipe passed down from my mother, but I had all the ingredients on hand so decided to give this a try. Very tasty! I even overcooked it by about 15 minutes because I had gone out for a walk, and had forgotten to wait until it was finished. It was still moist, with just a little crust around the outside. I'll make this again for sure. Thanks!

Famous Pork Chops

Such pork chops! I was afraid of them being too salty with the addition of garlic salt to the Ritz crackers, but I decided to trust the recipe and it was no problem. I added a few shakes of onion powder to the cracker mix too. Also follow the suggestion of some others and broiled on one side for a few minutes to get crispy. They were still very moist and delicious, even though I thought my chops were a bit on the thin side. This will probably be my standard recipe for pork chops from now on.

My Mom's Swiss Steak

I only rate the recipes I really like or really don't like, and I liked this very much. I pretty much followed it as written, except I sliced the veggies instead of dicing them. Served with mashed potatoes - very yummy. This reminded me a lot of the swiss steak my mom used to make.
