New Red Potato Salad

Thought I should post a review after using this recipe so many times. This is a very good basic recipe as posted, but I add 1 t. spicy mustard, 1 T. sugar, and 1/2 t. dill weed to make it classicly great (amounts if not doubling/tripling recipe). Huge hit everywhere I take it!

Chicken Marsala

Better than in most restaurants, in my opinion. I used half marsala and half chicken broth - no sherry, as I didn't have any and never use it. Borrowing a hint from another reviewer, I added a little cornstarch/water mixure to thicken the sauce. Super delicious chicken marsala!!

Super Easy Stir-Fried Cabbage

I have no idea what chinese cooking wine is (and wouldn't try to find it for one dish) so used seasoned rice vinegar instead. Also added a few dashes of red pepper flakes. If you don't think you like cabbage, try this recipe. You will change your mind!!

Russell's Fish Stew

I've never tried making a fish stew, but in searching for new and interesting diet-friendly things I found this. Super scrumptious -- so deliciously flavorful, and with just the right amount of spiciness!!! I used tilapia for the fish (had 3 lbs. of it in the freezer), plus added a can of whole baby clams along with the juice. I didn't have sherry, so just used the white wine. Other than that, followed the recipe as written. Read all of the reviews (mostly all positive) and can't quite understand the one that claimed there are too many ingredients for fish stew?? I guess we all have our own tastes, but this is restaurant-quality IMO.

Mexican Rice III

Best mexican rice recipe I've tried! The only change I made was using canned tomatoes because I didn't have any fresh ones. Served with chicken enchiladas. Have a couple leftover enchiladas but the rice is gone! I'll be making this again very soon. Thanks!1

Baked Spaghetti Squash with Beef and Veggies

Great recipe for a subsitute to high-carb pasta dishes. I added about 6 sliced mushrooms to the veggies and a few shakes of red pepper flakes to the sauce. Also layered (instead of mixing everything together) as follows: small amount of sauce-jsut to cover the bottom, half of the squash, half of the cheese, half remaining sauce, second half of squash, second half of the sauce, second half of the cheese. So super good good!

Barbeque Style Braised Short Ribs

Super yummy! Folllowed recipe pretty much exactly as posted and can't think of a thing that could improve it. Served over steamed basmati rice - perfect! Cut large carrots in about 1" slices, as I wasn't sure what "chunks" were. They cooked just right without getting mushy.

Real Chiles Rellenos

Fabuloso classic chiles rellenos-my all-time fave Mexican dish. I simplyfy the sauce by just whizzing the mexican stewed tomatoes in food processor without other additions - not needed IMO. Sometimes add some sauteed garlic and onion, but great without too. Also, don't worry if you don't have the combo of cheeses called for in the recipe - just about any mix of chees will work.

Moist Garlic Roasted Chicken

I have fresh thyme in my herb garden and was looking for a roast chicken recipe to use it in. Loved the flavor, and the chicken came out very moist and juicy. We like a crispier crust though, so next time I'll stuff everything in the chicken and roast it under a foil tent (my normal method). Thanks for sharing!

Baked Spaghetti

This was really good stuff. I started making everything before taking the cottage cheese out of the fridge and seeing that it had gone bad. I sub'd cream cheese mixed with a little sour cream instead. I cut down on the spaghetti after reading other reviews. Used about 10 oz. instead of 16, which was just right. Added some chopped fresh basil to the sauce from my garden. Delish!

Clark Gable Pancakes

Super easy, fast and tasty. My only negative comment would be the amount of baking powder. Although the author swears it's correct, I will cut it down next time - just a touch bitter IMO, but still really good overall. Servied with "smashed" sweetened strawberries and whipped cream - yum yum.

Chicken Quesadillas

Super good, but need to add a note for those using low-carb tortillas. These work so much better on a grill pan than baked in the oven. I've tried baking them in the oven with and without brushing with oil and/or butter, but the tortillas always come out very hard. Suggestion: Spray a frying pan with veg. oil spray and grill them at med. heat for about 4 min. on both sides -- they turn out tender and crispy. Also recommend sprinkling some cheese on the tortilla before adding the meat mixure, and then the rest of the cheese on top. This helps hold everything together.

Asian Chicken Salad

Excellent dressing (do use the sesame oil, add a few dashes of ground ginger and do make extra!!). I added fresh pea pods and mandarin orange slices to the salad ingredients. Here's a great modification that makes the chicken really stand out (instead of bland cooked shredded chicken-yuck). Thinly slice the chicken breasts and lightly coat with a mixture of 1/4 cup each flour & cornstarch, and 1/4 tsp. each of salt, pepper and garlic powder; stir fry on med-high heat till light brown and crispy -- about 8-10 minutes. You will like the results!

Slow Cooker Beef Stew I

Stew to die for!!! I used so many of other reviewers' suggestion-too many to mention, which turned out the most scrumptious stew I've ever made. Key improvements that made it great: Brown the floured beef first, use 3 c. beef broth or water/ water/bouillon combo, add Lawry's Beef Stew packet, add 1 cup frozen peas about 10-15 min. before finishing cooking. Prior to finding this recipe, I used only Lawry's Beef Stew packet, following the printed recipe. This recipe (with the tweaks) is soooooo much better.

Simple Whole Wheat Bread

Just finished baking and WOW, oh my! Perfect texture, flavor - just plain PERFECT loaves. Only had about 1/4 c. of honey on hand, so added about 3 Tbsp. brown sugar at step 2 instead of the additional honey. Otherwise followed recipe exactly, except realized afterward that I added only 3 c. whole wheat flour to the mixing bowl. I worked in at least 1/2 cup w/w flour during kneading though, so the end result was right regardless. Note: This made two loaves in 9x5 pans, not three (followed other reviewers' advice). Thank you for sharing this 5++ star bread recipe!! Already looking forward to making it again. :)

Hamburger Soup I

I was craving home made soup, and had the ingredients so decided to give this a try. It turned out great, but I think it would have been a bit bland without the help of others' suggestions. I combined many of them, which were key to success! Here's my combo of tweaks- Substitutions: Stewed tomatoes instead of chopped, Italian seasoning instead of basil. Additions: 1 clove crushed garlic, 1 tsp. Worcestershire, 1 bay leaf.

Marinade for Chicken

So super good and easy! I was cooking for 4, so adjusted amounts appropriately. I didn't have any mustard powder, so used about 1 tsp. Dijon mustard instead. Also added a clove of crushed garlic and about 1 T. of brown sugar. Only had a few hours to marinade, but next time I'll leave overnight if I can. Try this, you will like it!!

Beer Batter Fish Made Great

This was okay, but I wish I would had read more reviews before making it. Following advice of those I did read, I coated the fillets in flour before battering them, and cut salt by quite a bit - good tips. What I WISH I would have done: Cut paprika in half and gotten the oil hotter (it was hot, but not hot enough-fish was cooked, but soggy even after putting in paper bags). I'll probably try this again, but with the above changes.

New Orleans Corn Bisque with Smoked Sausage

Delicious, fast and easy - loved it! Important hint: Brown the cubed sausage at med-high heat for a few minutes, turning often to brown all sides. This really brings out the sweet-smoky flavor. Taking others' suggestions, I added a clove of minced garlic when sauteing the onions, and didn't pre-cook the potatoes - just threw everything in the pot when adding the milk. I didn't have canned corn, so used frozen. So much more flavorful than chicken corn chowder. Served with crusty bread - nothing else needed for a yummy and fast weeknight dinner!

Garbage Quiche

This was my first quiche, and I couldn't be happier! I used "Easy Pie Crust" recipe from this site posted by B1BMOM because it looked the fastest (I normally use pre-made from the market). I highly recommend this nontraditional, but excellent crust. Seriously - try this! I don't know how it would work for pies, but for this quiche it was perfect!! Didn't have Gruyere, so used mostly cheddar with a few sprinklings of feta. Perfect!
