Best-Ever Cucumber Dill Salad

Very tasty salad, thank you. I always buy Persian cucumbers, as we like them much better than "regular" ones (tender skin & meatier flesh). Since they're a lot smaller and thinner, I used 4. I only made two minor changes - omitted sour cream and just doubled the yogurt (Greek), and used 2 packets of Splenda instead of sugar because I'm cutting carbs. I doubt this made any difference in taste at all in this recipe.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

Outstanding!!! These cupcakes rival Sprinkles' in every way, and if you've had their cupcakes, you know that this is a huge prop! Super moist, with the perfect balance of spices. The only thing I did differently was using half butter and half oil. Since I was hoping to copy Sprinkles, I whizzed the pineapple for a few seconds break it down (didn't want bits of pineapple in there). I think that any cream cheese frosting would work with these. A+++++ recipe.

Twenty Four Hour Fruit Salad

I was so happy to find a recipe very close to the "24 hour salad" my mom and grandmother made for every holiday when I was growing up. It's kinda like a little dessert on your dinner plate. :) I had their recipe at one time, but lost it, sadly. Don't add poppy seeds -- they don't fit this salad. Do be careful when folding in the whipped cream and fruit - just FOLD in slowly., and make sure whatever canned fruit you're adding is very well drained, otherwise it will get soupy. Add the sliced bananas (needs 2 bananas) right before serving per the instructions, so they stay firm.

Irresistible Double Chocolate Muffins

Although the ingredients seemed a bit strange, I trusted the high reviews. I followed the recipe exactly, except for using only 1/4 cup wheat germ cause that's all I had left. I don't understand how others reviewed this highly. These were flavorless and odd tasting.

Caldo de Pollo

I was looking for a recipe similar to a Mexican soup I used to get from a catering truck in the neighborhood I used to work in. (Now know it's called caldo de pollo :) ). I've been craving it for months! This was very close, but it needed a bit more spice. I added ground black pepper (1/4 tsp. ++) and about the same amount of cumin. I pulled off the chicken skin before adding the veggies so we wouldn't have to deal with it after serving. Super good! A++.

Stuffed Green Peppers I

Very yummy! Just what I was looking for. I didn't stray far from the original recipe, except for adding 2 minces garlic cloves when browning the meat and onions, and using stewed tomatoes (chopped) instead of the whole tomatoes in the meat mixture (definitely recommend this). I topped the peppers with more cheese before baking them. I think the author of the recipe meant for this, as baking "until cheese is melty and bubbly" was mentioned.

Penne with Chicken and Asparagus

Some changes, but this produced an very tasty casserole! I added a can of cream of mushroom soup, and about 1/2 cup of frozen peas. Also sauteed 2 cloves of fresh garlic (instead of garlic powder), and about 1/4 cup chopped onion along with the asparagus (used leftover roasted chicken, so didn't put in the sautee pan). Put all into a casserole dish, baked for 30 minutes, and topped with the cheese. We're huge fans of chicken casseroles, and my family said this was among the best I've made.

Broccoli Cheese Soup

Excellent! Full respect for the recipe as written. I had no idea how to start making a great broccoli cheese soup that I so wanted to. I used some others's little tweaks (thank you) out of necessity or personal preferences, but the basics are all here. Love it!

Chicken and Black Bean Chili

Worthy of 5 stars following advice from other members' suggestions - especially less water! I used about 3 cups which was plenty - otherwise would have been soup, not chili! Also added a can of fire roasted diced tomatoes and more cumin than what was called for (other suggested changes). I chopped up a canned chipotle pepper instead of grinding a dried one because I had it on hand - great flavor. My hint/help: Pound the chicken breasts between sheets of plastic wrap or wax paper to tenderize them before browning if not using ground chicken.

Creamy Chicken Pasta

Giving it 4 stars for a jumping off point. Good start, but needs ALOT more flavor. My additions, which produced really yummy results (everyinging into the mixing bowl -- Sauteed (together) 2 diced carrots, 1/4 c. diced onion, 1 lg. clove minced garlic. Then add 1/3 c. shredded cheddar cheese, 1/4 c. mayo, 1/4 t. thyme, 1/4 t. each salt and pepper. Note: Thyme is a really essential addition to creamy chicken casseroles. Really enhances flavor of an otherwise ho-hum dish. Don't overdo it though -- a little goes a long way.

Pan Fried Tuna Patty

Loved these. The mixture will be runny so you can't really form them into patties, but this should be expected without a binder. The idea is to spoon them into the pan and slightly spread them out. They will firm up during the frying process. I had chopped pecans, so used these instead of walnuts. Only other change was to add a couple tablespoons of chopped onions. Yummy low-carb version of the tuna patties my mom used to make.

Roasted Beets and Sauteed Beet Greens

Time to post a review after making this at least 5 times now. I love beets, and roasting them with skins on is the best and easiest way I've found to cook them. The pleasant surprise was the greens! I had always just cut them off and tossed them before finding this recipe - tragic mistake. I had no idea how delicious beet greens were. I've been raving to friends and family since making this recipe the first time. Lately I've been spreading the greens over the cut-up beets after adding the red wine vinegar. I sometimes use balsamic, which is also great. Thanks for the discovery! Note -- I agree with the other reviewers that wish that beet greens alone were widely available.

Easy Lasagna I

Very good. I used more meat though -- 1 lb. lean ground beef plus 1/2 lb. mild italian sausage. Used fresh mushrooms (sauteed with onion and garlic). Instead of mixing mozzarella into the ricotta mixture, I spread on top.

Cheesy Amish Breakfast Casserole

Super simple and tasty. Followed the recipe as written, but added an extra egg as the mixture looked a bit dense (my eggs may have been on the small side). To save a bowl to wash, I let the bacon & onion cool a bit, and just added the remaining ingredients to the original pan before pouring into the casserole.

Baked BBQ Baby Back Ribs

Wow, wow, wow!! I've been messing up oven baked ribs for years (could never get the fall-off-the-bone trick), and was on a mission to get it right. Slow cooking in foil first is THE KEY! How could I have not known this earlier?! I improvised a lot on the rub -- about an even mix of chili powder, cumin, paprika, garlic powder and brown sugar. I usually try to stick exactly to the recipe, but I had to use what I had. Results were amazingly good none the less!!

Amish Meatloaf

I used wheat crackers (what I had on hand) and reduced to about 1 1/2 cups -- 21/2 cups of crackers seemed way too much. Sub'd 1/2 lb. pork sausage for part of the ground beef, so didn't put bacon on top. Also added 1 clove crushed garlic and 1 tsp. worshestershire to meat mixture. One of the best meat loaves I've made - which is saying a lot! Yes, with the sauce, this makes a sweet kind of meatloaf, so if you're looking for the brown gravy type this is not for you.

This is a great dish for low-carbers, like me :). My boyfriend didn't think he'd like it, but he ended up having a huge second helping. I used fresh spinach instead of frozen. Topped off with a few shakes of tobasco - cause we love heat!
