Chocolate Covered Cherry Cookies II

Reviewed: Mar. 30, 2006
I took other reviewers advice, some changes I made were, 1/2 white 1/2 brown sugar, a few teaspoons of cherry juice to the cookie dough, and the dough was not at all crumbly or dry. Neither were the cookies. After trying all the different ways to make them, I think that they are WAY prettier if you bake the cookies plain, smush a cherry into them right out of the oven, and then drizzle or cover with the chocolate. These were a HUGE hit with my husband, and I liked them a lot too. I will for sure make them again, and always put the cherries/chocolate on after the cookies bake.

Pepper, Onion & Feta Pizza

Reviewed: Jan. 23, 2006
A local pizza place makes a sauceless feta cheese pizza sort of like this, and I love it, so I thought I'd give it a try with this recipe as a starting point. I did most of the recipe as written, but added fresh baby spinach leaves and some artichoke hearts. It was delicious. You have to be aware that there is no sauce/gooey cheese to hold it all together and eat it more carefully, but it's a tiny inconvience compared to the yummy taste. Some other toppings I'm considering for next time are marinated mushrooms, sun dried tomatoes, and different kinds of olives. Crispy crumbled bacon would also be good on this!

Ham and Cheese Salad

Reviewed: Jan. 6, 2006
I love adding celery to sandwich fillings for both the taste and the crunch, but my husband HATES how celery strings get in his teeth and avoids it at all costs unless cooked to death. I would have never thought of putting it in the processor with the ham! It's the perfect solution! I'd never made ham salad before, but we really like this recipe!

Dilly Potato Salad

Reviewed: Aug. 10, 2005
I love dill, and don't like yogurt, so I was both tempted and afraid to try this recipe. But I'm glad I did. I really really liked how this salad was not sweet and sugary tasting. I did add a lot more mustard than it called for...and some more dill too! Yummy!

Rick's Special Buttercream Frosting

Reviewed: Jun. 8, 2005
Best fluffy buttercream frosting ever. I also did the 1/2 butter flavored shortening, 1/2 butter thing, and a bit less sugar, but the KEY to making it fabulous is ALMOND flavoring! It makes it so good!

Spinach and Strawberry Salad

Reviewed: Feb. 7, 2005
I was not a fan of this dressing at all. It was sticky sweet. It tasted like syrup poured over spinach. My husband however said it was 'ok I guess' so I gave it 2 instead of one star.

Famous Coconut-Almond Balls

Reviewed: Dec. 20, 2004
These were great! I put the cookie sheets with coconut balls in the freezer to help set up, they were SO easy to roll the 2nd time after being in the freezer, BUT the chocolate set up way fast when poured onto them being that cold. I will definately make these again!

Creamy Chocolate Frosting

Reviewed: Aug. 8, 2004
YUMMY! I love the consistancy of this frosting. I thought the flavor of the cocoa was better the next day. I added a teaspoon of Almond flavoring and almost died it was chocolate heaven!

Yummy Honey Chicken Kabobs

Reviewed: Aug. 8, 2004
This is the BEST marinade ever! I could eat it with a spoon! I marinate the chicken and vegetables seperately in ziplock bags overnight and then skewer them before grilling. I LOVE this recipe because it doesn't call for any unusual items and I always have all the ingredients on hand.

Quick Brownbag Burritos

Reviewed: Jul. 12, 2004
We made these and thought they were wonderful! I used a can of diced tomatoes & green chilis (drained) instead of salsa, and added a small can of corn, and some sour cream. They were so delicious and super easy to make. My husband wanted to eat the mixture right out of the pan! Definately a good break from meat now and then.
