Southwest Summer Salad

Delicious! I seasoned and grilled a couple chicken breasts and added black beans. The dressing was incredible! My daughter said it was better than Chipotle.

Jalapeno Popper Spread

Great recipe. It was a hit at our picnic. I used the suggestions of others and added 1/2 cup sour cream and 1/2 cup mayo. I also used three large fresh jalapenos in place of the canned. That change added a nice fresh taste. Delicious!

Quick and Easy Alfredo Sauce

Simple, Easy, Delicious! I used two cloves of fresh garlic in place of the garlic powder added to the butter, I also used 1% milk instead of cream and it was still thick and delicious. I also added fresh nutmeg as others suggested. A simple recipe my family loves. Very nice!

Skillet Ham, Cabbage and Potatoes

My Mother-In-Law made this recipe for her family for years, she always added the green beans to the mix as well. It is nice to see it in writing! It is a very forgiving recipe. Tonight I used bacon instead of ham and added frozen green beans and new potatoes. Very tasty.

Strawberry Spinach Salad I

Delicious! A great salad, tasty enough for a special occasion but simple enough for a regular dinner at home. I agree with the others in the addition of balsamic vinegar, it adds a sweet flavor. If you have it, try to add a bit of sesame oil to the dressing. I didn't have almonds so I substituted chopped pecans. I added a special step...put the nuts in a hot pan and add about 1/8 cup of sugar, the sugar will melt and carmelize. What a yummy sweet/salty addition! Great recipe!

Mini Cheesecakes

Quick and simple recipe. I used the regular sized muffin pans and used cookies for some of the crusts and graham cracker crust for the rest. I added fresh peaches on top of the graham cracker crust and topped with the cream cheese mixture then sprinkled with cinnamon and sugar. Very tasty! Be sure to use room temperature cream cheese. A nice light cheesecake recipe that makes enough for a crowd.

Good Old Fashioned Pancakes

Excellent! Light and fluffy. My daughter said they were the best. I did add a bit more sugar and as the batter sits it does get thicker, simply add a touch of milk to thin. A great recipe!

Balsamic Vinaigrette

This is a recipe I have used for years. It is a favorite. I use the regular balamic vinegar, although I imagine the white balsamic would be great as well. I also add a bit of honey for sweetness. My 13 year old loves this dressing. It is the only way she eats salad. This is a keeper and always prepared and ready in my fridge. Try it with a romaine salad with almonds and dried cranberries. Yum!

Buffalo Chicken Dip

I made this dip last night for a cookout. I received the most compliments of any dish I have ever made. It was really a hit! I used a mixture of bleu cheese dressing & ranch. I also followed the suggestion to layer the cream cheese mixture, then the chicken & buffalo sauce and topped with cheddar cheese. Everyone loved it. I had men at the party asking for the recipe!

Annie's Fruit Salsa and Cinnamon Chips

Delicious! It was a hit with the family at Easter Dinner, a nice change. In the future I will dice the fruit using an egg slicer and hold off on the preserves and sugar until about 15 minutes before I am ready to serve. It does create a lot of juice if you add the sugar too far ahead. I sprayed the tortillas with butter flavored spray, sliced them and then tossed them in a ziploc bag with the cinnamon sugar mixture. This saved a lot of time. The kids liked helping with this recipe. A new favorite!

Cinnamon Supper Cake

Really tasty dessert. I did use butter instead of the shortening. Easy to prepare and just the right size for our family. My seven year old daughter pretty much made this herself. She thinks this is the best cake she has ever tasted. We'll keep this recipe!

Roasted Brussels Sprouts

WOW! I just made this recipe. They are amazing! I baked the brussell sprouts along side roasted potatoes and roast pork tenderloin. They were wonderful, sweet and nutty... delicious!

Hot Cocoa Mix in a Jar

Very Creamy. My kids loved it! I cut heart shaped marshmallows and filled a mug for my daughter's teachers as a Valentine's gift. I heated the water, added the mix, then finished by whipping with my hand blender, ultra smooth. Yummy!
