Aw-some Coleslaw

This is now the ONLY cole slaw dressing that I'll make. (We used to use Marzetti which everyone liked, but this is so easy and delicious.) The ingredients are always in our home, making it easy to whip it together. I made this 2 days ago and what was left over tastes even BETTER! Make it a day or 2 in advance and it only improves. AMAZING. Don't change a thing. Thanks for this recipe Cookingnut!

Creamy Chicken With Pasta and Broccoli

Glad to see so many of you tried my recipe. It's a good basic beginning. Adding personal favorite spicing will only make it better. When I have little ones to feed, I keep it simple --when it's for older palates, it's nice to add the garlic and cayenne pepper and whatever else you enjoy. (I'm encouraged to add other of my favorites to this site now.) ;)

Chicken Stew With Coconut Milk

This was an interesting stew. In the first few spoonfuls it wasn't looking very promising. BUT... the more you eat it the more it grows on you! Although not what I expected, I did ultimately enjoy it.

Apple Cinnamon White Cake

This is a wonderful recipe. I doubled it and baked it in a 9x13 pan. It baked in 40 minutes. Hubby had 2 pieces while still warm. Might add nuts next time ... and there WILL be a next time!

Christmas Chip Dip

Update: Easier yet! Just combine the jelly and the cream cheese, stir together and serve with Club crackers. HUGE HIT! What could be easier *~... Original review: I love this. But I really wouldn't even have thought to call it a "recipe". For me, it's just a way to eat jalepeno pepper jelly! Which is on a cracker over cream cheese. It's simply delicious. It's a nice mix of sweet and spicy. (But if you don't like spicy, you probably won't enjoy it.) I howerver, LOVE it.

Cobb Sandwich

This reminds me of a recipe I have enjoyed for a long time. Mine is a "club" and has no chicken. It's three slices of toasted whole grain white bread and also has thinly sliced red onion and tomato. It's a keeper!

Quinoa Pudding

I cooked this with almond milk, raisins, chopped honey crisp apples, cinnamon and vanilla. When served, I added stevia to sweeten, as my DH is diabetic, and more almond milk.(In my bowl, I also drizzled on a little sugar-free caramel flavored syrup, the kind you'd add to your coffee drink). Delicious!!! Oh, I've also used french vanilla coffee creamer in the bowl rather than just adding more almond milk. Either way it was fabulous. Was great as a breafast cereal OR served as dessert as a 'rice pudding'.

As suggested by other reviewers I halved the soy sauce. I now wonder if it was too little, I think I'll add a tad more next time. There will be a next time as this is a different side dish and one that I'm happy I found. Thanks Outliercook!

Super Al's Cocktail Sauce

Love it! This couldn't have been easier to make. Doubt that we'll every buy it again! With only 4 ingredients it couldn't be simpler. (We needed to make it as a last minute addition and only had prepared horseradish and bottled lemon juice - but it was still excellent.) Thanks Al.

Made mine with a couple of modifications. I used 3 cans of Campbells Golden Mushroom Soup instead of broth and added peas. Also used marjoram instead of thyme.

Cucumber Soup I

I don't even know if it's fair to rate this recipe since I varied sooooo far from what is stated. BUT I decided to go ahead to show just what a great base it is! I made this, last minute, to use excess cukes from the garden, so I had to use what was on hand. White onion; raspberry balsamic vinegar; 3-4oz firm tofu; in place of farina:about 2-3T nutritional yeast & 2T dry cream of broccoli soup powder; chopped fresh basil, oregano & chives; 1t minced garlic; 1 small jalepeno-seeded, no membranes. I knew I was going to be pureeing this in my VitaMix so I didn't bother peeling the cukes (preserving the vitamins) by the time it's through there is no sign of skin or anything solid. I plan to serve this chilled with dinner, BUT it was so darned good that I had a cup hot for lunch! (And I just realized that I ate it without the sour cream -less calories and STILL delicous!!!) ...but I WILL add it when we have it chilled with dinner. **I LOVE the idea of adding fresh avacado (and maybe lime & cilantro too) oh the possibilities!!!

Cranberry Sauce for Acorn Squash

We thought the flavor was delicious. Since alcohol is a concern in our home, I subbed the port wine with orange juice-with great results. Since I was only making one squash, I had quite a bit left over. I continued cooking down the remaining sauce with a bit more OJ until I had a sort of 'fruit filling' that I then stirred into a basic yellow cake batter. It was a wonderfully moist and delicous cake!

Pan-Fried Asparagus

Cheesy Vegetable Chowder

Absolutely the best! I'd give it more stars if I could! Everyone enjoyed this. I didn't use celery, corn or peas. Instead I used: broccoli, cauliflower, fresh mushrooms, fresh pea pods, potatoes, carrots, fresh green beans, and microwaved them until just tender. It was FABULOUS, but next time I'll select a few less veggies! This recipe will be a staple in at our house.

I made this for Thanksgiving morning and everyone enjoyed it and told me to be sure that I save the recipe. The subtle changes in seasoning were what made this a keeper. It isn't overwhelming, but different enough. "Egg dishes can be kinda boring, but this one was good." I added 1/2 pound of bacon and 1 pkg of pork sausage (because I had them on hand.

Sweet Potato Bisque

Sorry, just wasn't for me. I don't even think that it was the recipe necessarily. I guess I just don't care for this in general. I found it to be rather drab and just not worth it. (I like sweet potatoes, but they just don't seem to be enough to pull off a soup.)

Pumpkin French Toast Bake

This was NOT a hit with our family. I had high hopes for it and made it for Thanksgiving morning. Although no one thought it was bad enough to be thrown away, they also didn't think it was good enough for seconds or that I should ever make it again. Most of what I heard was that it was a 'weird texture'. Sorry not a winner for us.

Chicken Vegetable Potpie

This was both easy and delicious. I used a prepared pie crust; diced up frozen california blend veggies and a can of cream of mushroom soup along with the golden mushroom. I also added poultry seasoning for a wonderfully tasty potpie!Thanks for this versitile recipe~

Quick Classic Gazpacho

YUMMY! Used fresh cilantro - had only balsamic vinegar, but it was still terrific! I may have used more fresh peppers than called for. I had baby red, yellow & orange and I used them all. But this is a great basic recipe that can be changed easily. I plan to keep this chilled in the fridge most days in the summer. I don't have to geel guilty about eating it either, as it is a good, refreshig and heatlhy lunch, snack or soup for a summer dinner.
