Amish Breakfast Casserole

This was so easy and I loved the fact that it didn't have bread chunks or 'biscuits' in the recipe! My picky eaters even wolfed it down! I didn't have bacon or cottage cheese, so I used sausage and sour cream instead, and I also added some minced garlic to the meat mixture. I will definitely be making this again, and next time I think I'm going to add some peppers & mushrooms.

Chicken and Dumplings III

Super easy recipe, however I found it to be missing a little something, so I tweaked it a little... STEW: I used 4 cans of broth and 3 cream of chicken soup (we like our broth!), I added diced carrots, crimini mushrooms, minced garlic, thyme to the celery and 1 med onion and deglazed the pan with approx 1c of white wine. Next time I will also cut back just a bit on the celery seed. DUMPLINGS: Added garlic powder, parsley, black pepper and grated parmesan and used buttermilk in place of regular milk. The kids even ate this (which, believe me, speaks volumes) so this one will be going into the favorites!

German Chocolate Cake Frosting

An excellent recipe! A couple of alterations I made to it were... 1) as other reviewers suggested, cooking it on med/low to med heat, but I only stirred occasionally. 2) I found it to be a bit thin even after the cooking process, so I just added more coconut (approx 1/2 to 1 cup additional). Next time I make this (and I most definitely will), I may cut down on the sugar a bit as I typically use sweetened coconut.

Sweet Potato Rolls

Made these for Thanksgiving dinner, and they were a huge hit! Even my kids, who can't stand sweet potatoes, devoured them. A few alterations I made were...1) I used fresh sweet potatoes, steamed then mashed with a little butter and pineapple/orange juice. 2) I used brown sugar instead of white. 3) brushed the tops with butter after I pulled them from the oven. Next time I make these, I may try using buttermilk instead of water. I have already been told that I will need to make these again for sure!

Caramel Corn IV

This recipe IS super simple to make. I made the caramel as per the recipe (using air popped corn instead of stove top in oil) for my first batch, and there was not near enough caramel to cover the corn, it looked as though the edges had just been brushed with caramel, not coated like the majority of us picture traditional caramel corn. I doubled the caramel recipe for the remaining batches and they all turned out fabulously! I used a metal turkey roasting pan to mix the caramel corn in and it worked perfectly. A few variations that I tried with following batches... 1) Add 1/2-1tsp cinnamon to caramel before it boils. 2) Add 1-2 cups mixed nuts (salted or unsalted) to popcorn before adding caramel 3) During your final 'stir', mix in 1/2-1 cup chocolate chips. Will not coat popcorn but will 'streak' chocolate throughout.

Scented Applesauce-Cinnamon Ornaments

I used my stand mixer to make this dough and let me just say, be prepared for a mess if you mix it this way...clouds of cinnamon deposited everywhere, but it was lots of fun. This recipe makes A LOT of ornaments, could have halved the recipe and still had plenty. The only alterations I made to this was to add 2-3Tbsp of white glue for strength and approx 3 tsp copper colored ultra fine glitter to the dough. It just added a bit of sparkle to the dull cinnamon.

Pumpkin-Oat Scones

This recipe baked up nicely, however, next time I will try using less oatmeal, add a bit of brown sugar and use buttermilk in both the scone and icing (buttermilk is made from skim milk, so just as heath conscious), this recipe was extremely bland and not even slightly similar to those from that 'famous coffee store' other than the fact that they have pumpkin in them and icing on top.

Buttermilk Cinnamon Rolls

Tried this recipe out this morning and my family LOVED them! The recipe is so easy to follow. I did, however add quite a bit more cinnamon (at least 2tsp more), the amount in the recipe just wasn't enough for our taste. I also made a simple glaze using powdered sugar, buttermilk and vanilla & orange extracts and just drizzled it over the top. One change that I would make to this recipe is the method that the cinn/sug/butter is applied, & go back to a more traditional method. Brush dough with soft butter, mix cinn/sug together and sprinkle over butter (also am going to try a 1/2 brown, 1/2 white sugar mixture). Just a comment to the gal who needed 8cups of flour...you may bake 'all of the time' but you obviously did something wrong, because that much certainly isn't needed. I would advise that you at least try the recipe one more time.
