Hash Brown and Egg Casserole

Reviewed: Jan. 19, 2015
I won't rate this one yet since I used ground pork instead of ground breakfast sausage. My mistake. I did not read the labell carefully at the meat section. That being said.... it is very important that you use ground breakfast sausage for this recipe. Because of my oversight with the meat, it was bland and uninteresting. However, the texture and look was lovely. I will definitely be making this again WITH breakfast sausage and un updated rating.

Balsamic Chicken

Reviewed: Jul. 9, 2013
I didnt have regular balsamic, I only had balsamic glaze. I made my own Italian seasoning blend 1 part ea. of oregano, basil, savory, thyme, rosemary and red pepper flakes. I used chicken tenders and adjusted the cooking time...omg YUMMY!

Perfect Peach Smoothie

Yummo! I added a Tbsp Greek yogurt and a scoop of protein powder as well. The yogurt gave it a nice creamy texture without having a yogurt taste.

Blueberry, Banana, and Peanut Butter Smoothie

I used pure peanut butter and found it to be too much. Next time, I will use less. Otherwise, very filling & yummy.

Chicken Breasts Pierre

Reviewed: May 6, 2013
Outstanding! I had everything on hand and did not need to alter it. The savory flavor with the mild sweetness has a taste all its own. Not bbq, not sauerbraten, not teriyaki. You have to try for yourself to know what I mean. Out of this world delicious.

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Nov. 12, 2012
I changed one thing.... I drained the sausage after I browned it. This is a real winner. Plus, you can alternate ingredients easily if you dont have them in stock. For instance use half & half with a tablespoon of tomato paste if you dont have the heavy cream. you can always add your own italian seasoning if you dont have the italian style plum tomatoes, such as diced tomatoes or plane whole tomatoes with a tbsp of basil and a tbsp of oregano. This is going to be a lifetime favorite in my house.

Easy Chicken Rice Casserole

Reviewed: Oct. 14, 2012
This was so so as is. I only had 1 can of soup. So, I halved the recipe. To add volume, I added 1 cup of frozen spinach to the soup rice mixture. I also only had chicken quarters. I browned them with a good dose of lemon pepper seasoning quickly in a skillet before I topped the rice. I baked it covered for 45 mins. and that was plenty of time for the chicken and the rice. I would submit this as an entirely separate recipe. But I cannot find the link to share since AR updated this site.

Haas avocados are what I recommend. I used the large Mexican avocados and it was bland. So, go with the more expensive Haas.

Collard Greens and Beans

Reviewed: Mar. 2, 2012
This is a meal all by itself. Wow, I'm glad I didn't throw that chicken in the oven to have with this. This is so filling and delicious, It was not necessary. I followed the recipe using chicken broth for the water, and dried great northern beans instead of canned (of coarse I soaked and cooked them first) and it was perfect.

Mimi's Slumgullion

Reviewed: Mar. 1, 2012
Peppers were too soggy but, the flavor was awesome. I wish there was a way to get the flavor of the peppers without actually using peppers. maybe if I dont slice them up and just quarter them. this way, I could remove them when the dish is done. It definitely needs the peppers.
