Rosemary Ranch Chicken Kabobs

This makes delicious, moist chicken kabobs, but have to be careful because my husband always thinks they cook faster than they really do, and we've had a couple thicker pieces that were underdone. Taste great on salad or served along baked potatoes, or rice & a veggie!

Banana Crumb Muffins

I doubled the recipe but didn't quite have enough bananas, so I subsituted about 1 cup of cooked mashed sweet potato I needed to use up. They were very moist, maybe not as sweet as they would have been with all banana, but delicious just the same. The crumb topping wasn't the most crumbly, but I took them to some friends, and everyone thought they were great. Will definitely hang on to this one!

Chocolate Zucchini Bread II

I took the advice of other reviews and used 1/2 applesauce, and half oil. Omitted the nuts & chocolate chips because I'm not fond of them in my bread/muffins & only used 1 tsp cinnamon. Made in standard muffin cups, baked about 20 minutes in my convection oven. I also added 2 extra Tbs of the cocoa powder, and had to substitute a 1/2 cup of packed brown sugar because I ran out of white sugar (didn't know I was so low!) All in all I think they have good flavor, they aren't overly moist but aren't dry or crumbly either as some have reviewed. I heat them for about 8 sec each in the microwave and they are very enjoyable. I'll try again sometime maybe with a couple more tweaks.

Coriander Salmon

This is our favorite recipe for salmon! My parents were visiting and when I told my mom I was making salmon, she said that was fine, but that neither she or my dad were big fans of salmon....after dinner she asked me for the recipe, they both loved it! I make it exactly as the recipe directs, sometimes I use skinless salmon, but usually just whatever I can get on sale....which often still has skin, either way it is yummy, and a staple on our dinner rotation. Our 18 month old also loves it!

Creamy Beef Stroganoff

I made this because I was looking for something inexpensive & easy that I could make with stuff I had on hand. It was okay. I followed several other reviewers recommendations and added onion, garlic, paprika, milk, skipped the sour cream and only added 1 can of condensed soup. I also used 1/2 lb ground beef, and 1/2 pound chicken sausage. Overall was okay, tastier than regular old stroganoff but probably won't be part of the regular menu plan.

Iced Pumpkin Cookies

These got rave reviews at Thanksgiving! They made a HUGE batch, but I had none left over! I made a couple alterations to try to make them a little healthier: -I substituted 1 cup of whole wheat flour, and used regular all-purpose for the rest -used only 6 Tbs. butter, and substituted 6 Tbs. milled flax seed -For the glaze I added 4 oz of softened cream cheese, because I love cream cheese icing on pumpkin baked goods! These were awesome, and I am getting hungry for them writing this review right now!!

Chicken Tetrazzini I

I followed a few other reviewers' advice and only used 1 can of soup, about 1/2 the called for sour cream. I also added diced fresh onion & garlic, and left out the mushrooms all together. It was delish!

Slow-Cooker Corned Beef and Cabbage

this was delish! Made it exactly like recipe, but left out potatoes (I served it with mashed potatoes instead) and added frozen (thawed) brussel sprouts to last 30 minutes of cooking. It was YUMMY!!

Hamburger Vegetable Soup

This soup was pretty good, I only made it with 1 pack of onion soup mix, added some saute'd onion and garlic powder, and left out the macaroni all together because I don't like how soft and bloated macaroni can get in soup sometimes. Served it to company, and everyone really liked it!

Cake Mix Cookies IV

These are super soft chewy cookies!! The only drawback is they are really greasy! I made a second time using 1/4 cup oil and 1/4 cup unsweetened applesauce, it helped cut the greasiness down, and they were still moist & chewy!

Carol's Chicken Salad

I've tried chicken salad a few times and this is by far my favorite recipe! I cut back on the poultry seasoning as others recommended, using only about 1/4 tsp. We didn't have any bottled lemon juice, so I squeezed a fresh lemon and then grated a little of the lemon zest into it. I took this to an office carry-in lunch, and it got rave reviews! Thank you!
